PASSIONFRUIT choccies fresh out of their frames this morning. So gorgeous 😍 I’d say this is my second signature design (if such things exist…) I started working on it about nine years ago this month as it turns out. Something super organic and different for every chocolate. It’s made by (somewhat exceptionally carefully) dropping a small dot of each naturally coloured cocoa butter into each cavity, then gently blowing them around with a small amount of air from the airbrush. It’s a little slow but rather deliciously mindful; and for that I’m very grateful. Anyway, all this to say here are some photos of our passionfruit chocolate; it’s bright and a little bitter and tastes like the perfect trip to the beach at the end of summer. Enjoy! Doc.Choc xx
