New colours mean new possibilities — let’s talk about Sage and Pink! 💚💗

If you’ve ever struggled to get soft, consistent pastel tones in buttercream or fondant, these two shades make life so much easier.

💚 Sage
A beautiful, muted green that’s perfect for botanicals, foliage, vintage palettes and modern minimalist cakes.
Tip: For buttercream, start with one drop and mix fully before adding more — pastel greens deepen quickly.

💗 Pink
A versatile shade that works for everything from baby showers to bold birthday cakes.
Tip: Pink intensifies as it sits, so let your buttercream rest for 10 minutes before adjusting the colour.

This week, Patricia from NSW ordered our Humphrey B. Bear cake tin. Australia Post said it wouldn’t arrive until Monday — but it showed up early on Friday, just in time for her son’s 30th birthday party. He was a huge Humphrey fan when he was little, and the cake was a big hit at the celebration.

Beginner Tip: How to Pipe Perfect Shell Borders

If you’ve ever wanted that classic, pretty border you see on vintage cakes, shell piping is the perfect place to start. It’s one of the easiest techniques to learn — and once you get the pressure‑and‑release motion right, it becomes so relaxing.

Here’s the simple method:

1. Hold your piping bag at a 45° angle
This gives the shell its little “tail”.

2. Squeeze → pull forward → stop
That’s the whole technique!
Squeeze to create the base, gently pull forward, then stop squeezing before lifting away.

3. Overlap each shell
Pipe the next shell so it sits neatly over the tail of the last one. This hides any imperfections and makes the border look seamless.

4. Keep your buttercream on the stiffer side
Soft buttercream = flat shells.
Stiff buttercream = clean, defined ridges.

A beautiful Sweet 16th birthday cake sent in by one of my lovely customers. She used Vanilla Sponge, Creaming Shortening, and Icing Sugar. Her message to me was: “Got my cake supplies, thank you as always.

If your sprinkles are melting or bleeding colour into your icing, you’re not doing anything wrong — it usually comes down to moisture.

Here’s the easiest fix:

✨ Add sprinkles right before serving when you’re decorating whipped cream, cream cheese frosting or anything with higher moisture.
✨ For buttercream, make sure it has crusted slightly before adding sprinkles.
✨ And if you’re colouring your icing, let the colour develop first — sprinkles stick better and bleed less.
