Established in April 2015 Coogee Honey contains honey sourced from urban bee hives in a backyard home in suburban Coogee. Coogee Honey is harvested during the summer
months when the bees make lots of honey. Each batch goes through the simple, time-honoured process of extracting, straining and bottling. The honey is NOT processed with any high
temperature pasteurisation or micron filtering of
any k
ind. It is completely raw, natural and free of
any chemicals used in its preparation. You might find Coogee Honey has a fuller and
richer flavour than processed honey available in
the supermarkets. The flavours are very distinctive and local to the Coogee area in which the hives are located. And because it isn’t blended but individually batch numbered and dated you really get to experience the distinct local Coogee flavours that change each season and often vary according to what has been flowering and which nectars and pollens the bees are collecting. If your honey has hardened or crystallised in
the jar, or ‘candied’ as it’s known in the trade,
that’s quite normal for raw natural honey. Just
place the jar in a bowl of hot water to return it to
a liquid state. And note also, honey is the only
edible product in the world that does not have a
