Coffee. Mocha. Espresso. Cocoa.

You’ll see all of them in w**e tasting notes. But there isn’t a coffee bean in the bottle.

Tasting notes are associations. Fermentation, ageing and oak can create aromas and flavours that remind us of things we already know.

So when someone says a w**e tastes like coffee, they’re telling you what it reminds them of, not what went into it.

Save this for the next time a tasting note makes you wonder.

September was about finding a different way into the shelf.

A bold Zinfandel. A Chardonnay with range. An Italian white worth knowing. French bubbles beyond Ch*****ne. Malbec in rosé form. Sauvignon Blanc with a different accent.

Save the selection that sounds most like you, then bring it up when you visit. We can help you take the next step from there.

Here is a w**e-saving trick you may not have heard before.

If you have half a bottle left, do not necessarily leave it sitting in all that empty space.

Transfer the w**e into a clean, smaller bottle or airtight glass container that it nearly fills, seal it and put it in the fridge.

The important part is the space above the w**e. Less space means less oxygen sitting in contact with it, which helps slow oxidation.

A useful little trick for the nights when finishing the bottle was never part of the plan.

World Tourism Day is tomorrow. We are keeping the focus close to home.

Barbados hospitality is often remembered through the moments around the table: what gets passed around, what is poured cold and who gets invited to join.

For this weekend’s local pairing, the curation team chose Banks B**r with souse/boljol. A simple way to celebrate the food-and-drink experiences that visitors remember and locals already know.

Malbec is usually introduced as a red. That is not the only way to meet the grape.

Santa Julia Malbec Rosé gives you a lighter, chilled direction that makes sense when the weather is warm and the meal is relaxed.

If you like Malbec but want something fresher for lunch or an afternoon gathering, this is the bottle to ask about.

Not every bottle with bubbles belongs in the same category in your head.

Calmel & Joseph Crémant de Limoux Brut is fresh and crisp, with fine bubbles, white peach, flowers and citrus. Ruffino Moscato d’Asti is softer, sweeter and more aromatic, with floral notes, white peach and citrus.

Choose by taste and occasion, not simply by the fact that it sparkles.

If Sauvignon Blanc means one very specific flavour profile to you, try changing the place.

Château Roquefort Sauvignon Blanc brings a French expression to the shelf, with fresh citrus, floral and white-fruit character rather than relying on the most familiar style cues.

This is the kind of bottle to pick when you know the grape but want to discover a different version of it.

Grenache in France. Garnacha in Spain. Same grape, different regional language and very different contexts.

Victor Berard Châteauneuf-du-Pape shows Grenache in the Rhône tradition, where it is a classic part of the blend. Clos de Tafall Priorat brings Garnacha into a Spanish blend with Syrah, Carignan and Cabernet Sauvignon.

Compare them for International Grenache Day and see how much place can change what lands in the glass.

One simple way to make red w**e work better in the September heat: stop serving it warm.

Pinot Noir is a good place to experiment with a light chill. Cooler service can make the w**e feel brighter and more refreshing without turning it into a white w**e experience.

Robert Mondavi Pinot Noir is our bottle for the test. Chill it lightly, pour a glass and see which temperature you prefer.
