One of the coolest moments from filming our Farm to Fork campaign last summer was seeing the different stages of harvest for different kinds of vegetable. During our shoot, we had the opportunity to take in a red onion harvest in action.
What looks effortless is actually a carefully managed process. Tractor-drawn windrowers undercut and lift the onions, gently remove excess soil, and place them in rows where they can cure naturally in the sun for up to two weeks.
It's a step most of us never get to see, but it's an important part of producing the quality local food we enjoy every day.
