Last year after canning homemade Pizza sauce I looked at all the pulp and skins left in my tomato press and decided to try something…I put the pulp in my Freeze Drier…when it was done I put it in a few large Mylar bags with O2 absorbers and forgot about them…until today. I have never made powders before, but decided to grind up the pulp to see if it had enough flavour to make tomato paste(I need to get a bigger grinder if I’m going to continue making powders lol). It was a perfect…very flavourful paste with no added sugar liked canned paste…a little more water and it was a sauce…a little more and it was juice or a base for soup. Filled a half of a jar and vacuum sealed for immediate use…the rest I will grind and re-seal in Mylar for later. So excited to be utilizing something I would have discarded before!
