No hay dos chocolates exactamente iguales.
Aunque usemos el mismo cacao y la misma receta, cada cosecha trae pequeños cambios.
La lluvia.
El sol.
La fermentación.
El secado.
Todo deja una huella en el sabor.
Es una de las cosas que más nos gusta del chocolate hecho desde el grano: siempre hay algo nuevo para descubrir.

No two batches of chocolate are ever exactly the same.
Even when we use the same cacao and the same recipe, every harvest brings small changes.
The rain.
The sunshine.
Fermentation.
Drying.
They all leave their mark on the final flavour.
That's one of the things we love most about bean-to-bar chocolate—there's always something new to discover.

Hay algo especial en ver el atardecer desde Puerto Viejo con una taza entre las manos.
Nos sigue pareciendo un buen plan, incluso después de todos estos años.

Before anyone notices, the sun is setting.
They weren't in a hurry.
Neither were we.
There's something special about watching the sunset over Puerto Viejo with a warm cup in your hands.
Even after all these years, we still think it's one of the best ways to end the day.

Hay un momento que siempre esperamos durante las clases.
No es cuando la gente prueba el chocolate.
Ni cuando prepara su propia barra.
Es cuando alguien dice:
"Entonces... nunca voy a volver a comprar chocolate de la misma manera."
No lo decimos nosotros.
Lo dicen quienes descubren todo lo que pasa antes de que exista una barra de chocolate.
Y para nosotros, esa es una de las mejores recompensas de compartir este oficio.

There's one moment we always look forward to during our chocolate classes.
It's not when people taste the chocolate.
Or when they make their own bar.
It's when someone says,
"I'm never going to buy chocolate the same way again."
We don't say it.
Our guests do.
Once you've seen everything that happens before a chocolate bar exists, it's hard not to appreciate it a little differently.
For us, that's one of the greatest rewards of sharing this craft.
