Tip of the week.

Soaking fruit for your Christmas cake.

I know that Christmas seems to be a long time in the future, however, many people will have started to soak their fruit for Christmas cakes.

I follow Delia Smiths Christmas Cake recipe but I do deviate slightly from it by soaking my fruit for over a month and not in Brandy but in Amaretto. The Amaretto adds a nice flavour of marzipan throughout the fruit cake. So if you are not a big fan of Brandy try using a different spirit or fruit juice when soaking your fruit.

Tip of the week!!!

Melting Chocolate: Did you know that you could melt chocolate in the microwave? Or have you tried melting it in the microwave before but it ended up burning?

Well here's a tip for you....

* Break the chocolate up into pieces
* Put into a microwaveable bowl
* Place into the microwave oh high for 30 seconds
* Stir after 30 seconds and repeat until the chocolate has melted.

***** Do not put the spoon into the microwave*****

Tip of the week!

Do you have problems when cooking with homemade pastry, do you find that it shrinks whilst it is cooking?

To stop this from happening, after you have made it partially roll it out, then store it in the fridge for about 30 minutes or longer wrapped in cling film. This lets the pastry rest and stops it shrinking.

So next time you make homemade pastry try this trick. Comment below if you know of anymore tricks when cooking with pastry and good luck.
