Very excited to have been kindly invited back to the brilliant by awesome hosts Paul and Jen… this time it’s ALL about Detroit pizza!

3 flavours to choose from, two new ‘uns swipe for the money shots. 👉🏻 Book your slot via the link in the bio. ☝🏻I will be serving slices on the night but it’s advisable to secure a slot beforehand.

Those not fully aware of this style of pizza it’s a light fluffy focaccia base, baked in a pan with a truck load of cheese on top (along with other banging toppings) which create a cheese wall crust! 🤤 Once you’ve tried these dynamite edges I promised you’ll be hooked! These are perfect sharers for 2 people, treat yourself to one on your own but equally it can be shared between a group of 3 or 4 people. This makes the Detroit style the perfect social pizza which pairs beautifully with craft beer - which thankfully Two Brews have in abundance! 👌🏼 🍻

Triple Pepp
Focaccia, mozzarella/cheddar blend, pepperoni, roasted peppers and jalapeño peppers. Finished with hot honey drizzle

Ham, Egg and Chips
Focaccia, mozzarella/cheddar blend, ham hock, piccalilli, homemade chips, shoe string fries topped with egg yolk. Malt vinegar mayo added post bake

Buffalo Cauliflower (V)
Focaccia, mozzarella/cheddar blend, roasted cauliflower spiced with cinnamon, smoked paprika, garlic. Buffalo sauce, ranch dressing and chives

We are back at the Arcade Tavern this evening knocking out more Neapolitan wares this 5-9ish and tomorrow 12-5 for pre game v Blackburn Rovers pizza face filling.

A couple of new specials on this evening including the Flammkuchen
to help celebrate kicking off early at the Tavern. This Bavarian tribute includes a crème fraiche base laced with caraway seeds, nutmeg and egg yolk along with smoked frankfurters, mustard, sauerkraut and finished with chives and pretzel pieces! Swipe for a preview!

Back at the Arcade Tavern banging out more Neapolitan wares this evening 5-9ish and pre gane v Blackburn tomorrow 12-3.

We return to this Saturday for pizza in the garden - the ovens will be hot and ready to bake from 5 until 9pm or until sell out.

Couple of new specials on and they won’t hang around so make sure you get down and fill your lovely faces! Swipe to the carousel to feast your eyes on what could be exciting your taste buds. Mexican Standoff is essentially loaded chilli nachos on a pizza, I mean come on who doesn’t want to get involved in that?!

Levantine Vibes is for the more discerning pizza inhalers, lots of Middle Eastern flavours to smack you around the chops. happening just next door too so if your feeling you need some sustenance why not pop over and say hi?

Loads of cracking beers in the fridges at Hopsters too, so I can’t think of any reason why not to swing by… can you?

Next pop up event is another jaunt down the A12 to in Colchester for an evening session in the basement where I’ll be firing up the .uk Volt for some more pizza slinging action.

Pushing it out and about
Busy month coming up so here are the crucial pop up locations to satisfy your dough desire.

🍕First up we have our debut on Friday July 14th, coinciding with the event. More menu details to come in the next few days but looking forward to slinging out some of our finest pizzas alongside some quality craft beer and spirits under the arches.

🍕On Saturday 22nd July we are visiting The Victoria pub in Colchester serving in the garden late afternoon until evening.

🍕Friday 28th we visit for the first evening session in the basement. This will be bookable event. Again event details to follow.

🍕Finally rounding off the month with our regular spot at on Saturday 29th July with all the usual favourites alongside juicy craft bangers from the fridges of the Hopsters boys!

We’ll be set up with the .uk ovens in the garden of on St Nicholas Street, Ipswich from 5-9pm on Saturday 27th to fulfil your pizza to face application needs, where you can wash it all down with some stunning beer and spirits in the sun-drenched garden of Ipswich’s premier craft peddlers Ed and Stevo.👌🏼

Full menu available later in the week so keep a look out for the usual classics and a couple of surprise specials

Game of carbs
Always a sign that we are moving into brighter days ahead when Jersey Royal potatoes are back in season and more importantly it triggers the annual double carb pizza klaxon 🚨

This ended up with a bit a dauphinois vibe about it with a creamy bechemel sauce base, tallegio cheese, wafer thin slices of miniature jersey royals layered with red onion, rosemary springs and garlic oil. Finished with some lovely fennel chilli sausages to bring some salty aniseed aromas to the yearly carb pizza party.

Cooked on the .uk Koda 16 🔥 using gas

Dough:
61% hydration using blue flour. 24hrs fermentation, 12 RT/ 12 hrs CT (20hrs bulk/ 14hrs balled)

Hello you Halloumi…
This combo was direct inspiration from the hugely talented and her excellent recipe for ‘halloumi fatteh’ which blew my mind the first time making it. It manages to balance some big salty flavours of the halloumi and the fragrance/sweetness of pomegranate but I decided to change up the protein choice to spiced lamb from beef. Also it needed some wet to be added to proceedings so blitzed up some roasted peppers with some rose harissa and garlic for a fragrant tangy base.

The halloumi was fried added post bake with a yoghurt lemon and tahini drizzle, pomegranate molasses, coriander and some jewels of pomegranate seed to pop! Proper slice of sunshine on a late winters day
