Five years ago, I retired from my job as an Intensive Care specialist. Do I miss it? No. Would I do it all over again if I could go back in time? Absolutely. Working in the ICU at Prince of Wales Hospital was a privilege, but supporting grieving families, which is a vital part of the job, takes it out of you and there is only so much that you can do. Chocolate, on the other hand, is full of happy people and Carolyn and I have met so many lovely people through our business.

When we create the fillings for our chocolates, and in this case for one of our chocolate mooncakes, achieving the perfect balance between the ingredients is what turns "wacky" into delicious. We think we have achieved that with our sesame and Yunnan ham mooncakes. The saltiness and umami flavours of tiny pieces of ham offset the sweetness of the sesame mixture, while complementing the fruit flavours from the Paquibato cocoa.

Today we cycled 38 km just to eat at Auberge Sauvage, near Le Mont Saint Michel, and it was worth every kilometer of effort. Fantastic inventive food, heavily based on vegetables and herbs from their own garden, with additional ingredients supplied by trusted local producers. They also have rooms to stay overnight.
Definitely worth a detour.
