This week and next week are all about getting ready for at , making sure that we have lots of different chocolates for everyone! It’s also so lovely to talk people through making their own box of chocolates 🍫 Looking forward to seeing lots of friendly faces 15-17th of May in East Cork!

Spend another day as a chocolatier with me! I might have to start numbering these!

I don’t know if these DITLs are getting better or worse but I’m just a girl with a business who is trying ✨ There are so many hats to wear as a business owner, I used to only worry about taking the perfect photo of the bonbons. Now it feels a little more complicated to make “content” but I’m trying to just to stay my honest & straightforward self, who definitely isn’t perfect.

Also I’m still convinced the chocolates are shinier since we moved to Lisdoonan!

And took a wee break to go donate blood, if you are able to, you should .ie and then went back to make the fillings! So the kitchen was smelling heavenly ✨

You can tell I really just give it one shot at the voiceover but here we are!

I’m sure creatives and business owners can relate to having a brain itch while also trying to use up all the ingredients you have spare, so a strawberry pate de fruit & vanilla marshmallow appears 🍭 Any orders placed this week while have some of these treats popped into it as a thank you for the continued support ❤️

Honestly it’s wild how far this little business has come and it’s all thanks to my amazing customers and supporters ❤️

Just in case, you thought it was all glitz and glamour 🍫✨

We are all out here just trying out best and sometimes I feel like my best isn’t enough. I’m sure I’m not alone but it’s important to talk about it!

It was really nice yesterday when an industry friend said “look how far you’ve come!” Sometimes we are too hard on ourselves, and we all need someone to remind us of what we have achieved, little and big things!

A few weeks ago, I had the bright idea to invite some of my favourite gals to my new chocolate factory to make an Easter egg from scratch. It’s a space that feels half empty but full at the same time and it was fairly full when I invited the girls one week before Easter - parcels and Easter eggs lined the walls of one room while the other room was full of chocolate machinery and all the delicious ingredients that make the eggs plus 6 girls. 😅
I have always wanted to host classes, I’ve been told I’m patient and a good teacher throughout my career and there has been a class option sitting in the drafts on the website since it was launched. I must say it didn’t feel like such a bright idea when the room was getting so warm due to the chocolate motors, heat guns and 7 people’s body heat… But I’m so proud because everyone left with a beautiful Easter egg that they made from start to finish. They tempered the cocoa butter, decorated their mould, made the shell with the chocolate of their choosing, studded in the caramelized hazelnuts or raspberry layer, added their truffles and melted the Easter egg halves to stick them together. I was so proud of them all (and exhausted). The clocks went forward the night before plus I had been working around the clock so I could take this day off with my friends.

Now this is just my opinion, but I’ve always thought it was quite a scam to “make your own Easter egg” and just get to decorate it with cocoa butter or stick the two halves together… More aimed at children that adults. And considering only 1 of my friends has professional kitchen experience, this was great proof of concept.

It’s something I would love to do in the future if there was interest. Making an Easter egg, learn how to make bonbons or perhaps decorate your own gluten free cake?
