Let's fix that.

Peel your potatoes, cut them into medium-sized pieces and boil them in salted water until fork-tender.

Drain the water completely.

While they're still hot, mash them until smooth.

Add a little butter or margarine and mix well.

Taste for salt.

Simple. Creamy. Ready.

Here's the trick:

Heat a little cooking oil in a pan and place the smokies in whole.

Turn them gently as they cook so they develop that beautiful golden-brown, shiny finish.

For extra flavour, make a quick sauce using tomato sauce/ketchup, a little water and your preferred seasoning.

Coat the smokies lightly and keep turning them until the sauce clings to the surface and becomes glossy.

And there you have it.

Whole. Shiny. Mouth-watering.

The kind you pick up and bite into.

Slice your cabbage thinly.

Finish with freshly chopped dhania (coriander).

Mama Akinyi is finally heading home after a long day of shopping for Third Term.

She is THAT mother.

The kind who doesn't wait for the last weekend.

The kind who hears โ€œschool opens next weekโ€ and immediately thinks:

โ€œBasi, safari ya kesho hupangwa leo.โ€ ๐Ÿ˜Œ

But today, Mama Akinyi isn't feeling particularly victorious.

She's tired.

She's thinking.

She's calculating.

And she's beginning to wonder whether โ€œbeing preparedโ€ has perhaps gone a little too far. ๐Ÿ˜…

You see, after spending a good chunk of the money she was given on CBC/CBE materials, stationery and other school requirements, she suddenly remembers something.

Mama Okoth wa Samaki.

Mama Okoth had preserved some Omena for her.

She was supposed to pick them up on her way home.

Now, Mama Akinyi isn't worried that Mama Okoth won't give her the Omena on credit.

No.

What worries her is the explanation.

โ€œMama Okoth, zile Omena... nitakulipa kesho.โ€

And Mama Okoth will probably look at her like:

โ€œWewe unafikiria kwa sababu umefanya shopping ya third term kila mtu amefanya?โ€** ๐Ÿ˜‚

Because surely, Mama Okoth also has children going to school.

But that's not even the biggest problem.

The biggest problem might be waiting for her at home.

That very morning, Mama Akinyi and Baba Akinyi had a near-quarrel.

Baba Akinyi's solution was simple:

Now, you might think she'd look elsewhere.

That's her uniform supplier.

Then she made another interesting decision.

She chose the smaller sweater.

For Three reasons.

One: She wasn't going to buy from another shop.

Two: Akinyi is a Gen-Z girl, and Mama Akinyi wasn't about to have her walking around in a 'baggy' sweater looking like she borrowed it from her older sister whom she doesn't have. A slightly tighter one?

โ€œAt least itakaa smart.โ€

Three: And perhaps most importantly...

Mama Akinyi had been given money for school shopping.

And somewhere along the way, โ€œI have money for school shoppingโ€ had quietly become โ€œI must spend all the money allocated for school shopping.โ€

And now?

She's standing outside her own gate.

Carrying school supplies.

Thinking about Mama Okoth's Omena.

Thinking about Baba Akinyi.

Thinking about that sweater.

And suddenly wondering whether โ€œprepared for Third Termโ€ is the same thing as โ€œbought everything I could possibly buy.โ€

But wait.

I have just received some very interesting information.

Apparently, Mama Akinyi has deployed some highly sophisticated Luotative Language Tactics โ€” commonly known as LLT. ๐Ÿ˜‚

And she is now opening the gate...

Very slowly.

Eyes active.

Ears active.

Every sense activated.

She's checking for any sign of Baba Akinyi.

If you earn weekly, spending most of your money on one big shopping trip may leave you struggling before the next payday.

It's August in Molo. Fresh potatoes are coming from the farms, early maize is finding its way into homes, and the kids are around for the holidays.

So this Saturday, let's put together a simple, hearty dinner for the whole family.

๐Ÿ‘จโ€๐Ÿ‘ฉโ€๐Ÿ‘งโ€๐Ÿ‘ฆ ๐’๐ž๐ซ๐ฏ๐ž๐ฌ ๐Ÿ“

And whether you have one burner, two burners, or a cooker plus a charcoal jiko, you can make this work.

The secret is simply getting the order right.

For the Fried Capon ๐Ÿ—

โ€ข 1 medium capon, cut into pieces
โ€ข 1โ€“2 onions
โ€ข 2โ€“3 tomatoes
โ€ข 2 cloves garlic
โ€ข 1 Royco chicken or beef cube
โ€ข Cooking oil
โ€ข Salt

For the Potato-Lentil Stew ๐Ÿฅ”

โ€ข About 1.5 kg potatoes
โ€ข 1ยฝ cups green lentils
โ€ข 1 onion
โ€ข 2 tomatoes
โ€ข 1 Royco cube
โ€ข Cooking oil
โ€ข Salt

For the Fresh Maize ๐ŸŒฝ

โ€ข 5 fresh maize cobs
โ€ข Water
โ€ข Salt, if preferred

๐Ÿ‘ฉโ€๐Ÿณ๐‹๐ž๐ญ'๐ฌ ๐‚๐จ๐จ๐ค
1๏ธโƒฃ ๐’๐ญ๐š๐ซ๐ญ ๐ฐ๐ข๐ญ๐ก ๐ญ๐ก๐ž ๐‹๐ž๐ง๐ญ๐ข๐ฅ๐ฌ

Rinse the green lentils and put them on to boil.

โฑ๏ธ Pressure cooker: about 15 minutes
โฑ๏ธ Normal sufuria: about 30 minutes, or until tender.

This is your first job because the lentils can cook while you prepare everything else.

While they're cooking:

๐Ÿ”ช Chop the onions, tomatoes and garlic.

๐Ÿฅ” Peel and cut the potatoes.

๐ŸŒฝ Remove the maize husks and clean the cobs.

๐Ÿ— Season and prepare the capon.

By the time the lentils are ready, your other ingredients should be waiting.

2๏ธโƒฃ ๐‚๐จ๐จ๐ค ๐ญ๐ก๐ž ๐‚๐š๐ฉ๐จ๐ง

Drain the cooked lentils and put them aside.

Now cook the capon in a sufuria with the chopped onions, garlic, tomatoes, Royco, salt and a little water.

Cover and let it cook until the capon is tender and completely cooked.

If you have two burners:
You can start preparing the potato stew on the second burner while the capon cooks.

If you have one burner:
No problem. Use this cooking time to finish preparing the potatoes, lentils and maize. Once the capon is ready, you'll simply move on to the next pot.

If you have a charcoal jiko:
This is a good time to light it. Once it's ready, the maize can take over there while you continue using your cooker.

3๏ธโƒฃ ๐…๐ซ๐ฒ ๐ญ๐ก๐ž ๐‚๐š๐ฉ๐จ๐ง ๐Ÿ—

Once the capon is cooked and the liquid has reduced, remove the pieces.

Heat a little cooking oil in a pan and fry the capon until nicely browned and golden on the outside.

You don't need to deep-fry itโ€”just give it a good finish.

Set the fried capon aside.

4๏ธโƒฃ ๐Œ๐š๐ค๐ž ๐ญ๐ก๐ž ๐๐จ๐ญ๐š๐ญ๐จ-๐‹๐ž๐ง๐ญ๐ข๐ฅ ๐’๐ญ๐ž๐ฐ ๐Ÿฅ”

Heat a little cooking oil in your sufuria.

Add the onions and cook until soft.

Add the tomatoes and let them cook down.

Add the potatoes, Royco and salt, then add enough water to cook the potatoes.

Cover and let them cook until almost tender.

Now add your pre-boiled green lentils.

Stir gently and allow everything to simmer together until the potatoes are completely tender and the stew has thickened.

๐Ÿ’ก The trick is pre-boiling the lentils.

You do that right at the beginning, so when you reach this stage, you're simply combining them with the potatoes instead of waiting for everything to cook from scratch.

Using a charcoal jiko?
Boil the maize while the potato and lentil stew is cooking on the cooker.

Using two cooker burners?
Boil the maize on the second burner.

Only one burner?
Don't worry. Cook the maize after the stew is finished. While it boils, you can set the table and clean up.

Boil until the maize is tender, then drain.

Bring the potato & green lentil stew to the table.

Add your golden fried capon.

Serve the fresh maize alongside it.
