An amusement complex in central Copenhagen that we had the privilege of contributing to. Vitrum delivered the two bars, the custom self-service food modules, and the specialty furniture across the venue.

Gongu. Riga 🍸

A modern izakaya-nikkei restaurant in central Riga, blending Japanese and Peruvian cuisine across two floors. 90 seats, two bars, and a cocktail programme led by Deniss Smirnovs, President of the Latvian Bartenders Federation.

We designed and built both bars. Two Manhattan modules with split ice wells, speed rails, integrated bottle holders, and cutting board zones, plus backbar refrigeration and wine coolers.

3 mistakes that ruin an open kitchen 🍳

Open kitchens live and die by the same details that closed ones can afford to ignore. Noise carries, heat and smell reach the guests, and everything that would normally sit behind a wall becomes part of the dining experience.

We design them differently from the start. Ventilation is sized against the specific equipment. High-heat stations sit furthest from the tables. Every surface, joint, and cable route is planned before fabrication, so nothing sits exposed unless it’s meant to be seen.
