PLANNING YOUR BATCHES AROUND THE YEAR

Biltong making is not a one-off event. Once you have a chamber, it becomes part of how you plan your kitchen throughout the year.

Warmer months bring more entertaining, which means more batches for boards, braais, and gatherings. Plan slightly larger batches from spring through summer if you know you will be hosting.

Colder months are ideal for slower, thicker cuts. You are indoors more, which means more attention available for longer curing times and thicker slabs that take 96 hours or more.

Holiday season demand spikes. If you are gifting biltong or bringing it to family gatherings, plan your batch at least a week ahead. A rushed batch is never as good as one given proper time.

Meat pricing fluctuates seasonally too. Many butchers offer better pricing on specific cuts during certain months. Building a relationship with your butcher means you will hear about this before it is common knowledge.

Batch planning is not complicated. It just means thinking a few weeks ahead instead of deciding the day you want biltong.

CHAMBER CARE THAT ACTUALLY MATTERS

A chamber that is looked after will outlast one that is not. The maintenance required is minimal, but skipping it shortens the life of your equipment.

Clean the gasket seal regularly. This is the rubber seal around the door. Food residue and grease build up here over time, and a compromised seal means air leaks, which means inconsistent drying.

Wipe down interior surfaces after every batch. Meat juices and spice residue left on trays and racks can affect the flavour of your next batch and attract pests if not cleaned.

Check the mesh vents monthly. These allow airflow in and out of the chamber. Dust and debris can reduce airflow efficiency over time.

Do not use harsh chemical cleaners. Warm water and mild dish soap are sufficient. Harsh chemicals can leave residue that transfers to your next batch of meat.

Store trays and hooks properly between uses. Keeping them in the chamber when not in use is fine, but make sure they are dry first to avoid rust developing on any exposed metal.

Your chamber is an investment. Five minutes of care after each batch protects that investment for years.

HOSTING WITH BILTONG, DONE PROPERLY

Most people put biltong on a board and call it done. That works, but it is not hosting. It is serving.

Hosting means thinking about how your guests experience the biltong, not just that it is present.

Temperature matters. Biltong served straight from the fridge is firmer and less flavourful than biltong served at room temperature. Take it out 20 to 30 minutes before guests arrive.

Slicing matters. Thickness affects the entire experience. Thin slices (5 to 10mm) work well as an appetiser. Thicker cuts (10 to 15mm) feel more substantial for a main snacking spread.

Pairing matters. Biltong sits well next to sharp cheese, pickled vegetables, and something acidic like olives. The saltiness of the biltong needs contrast, not more salt.

Presentation matters. Fan the slices instead of stacking them. It takes 30 extra seconds and completely changes how the board looks.

None of this requires extra skill. It requires attention.

VENISON BILTONG – THE GAME MEAT TRANSFORMATION (LEANER, RICHER, UNFORGETTABLE)

Venison is not beef with a fancy name.
It's a completely different animal – literally and flavour-wise.
Leaner. More delicate. Richer tasting.
This recipe transforms venison into biltong that people will be talking about for months.

INGREDIENTS (Makes approximately 1.5-2kg finished biltong):

MEAT:
• 3kg venison (shoulder or haunch), cut into 15 - 20mm thick slabs
• Dab completely dry before curing

CURING MIX:
• 65g coarse salt (2.2% of meat weight)
• 250ml brown vinegar (5-6% acetic acid)
• 3-4 tbsp crushed coriander (medium grind, toasted)
• 2 tbsp ground black pepper (venison tolerates higher pepper)
• 1-2 tbsp minced fresh garlic (optional but recommended for venison)
• Optional: 1 tsp juniper berries, crushed (pairs beautifully with venison)

STEP 1: PREPARE THE VENISON
Trim any silverskin (the thin white membrane) – venison has more than beef.
Cut with the grain into 15 - 20mm thick slabs.
Pat completely dry with clean kitchen towels (venison has less natural moisture than beef).

STEP 2: COMBINE SPICES
Toast coriander seeds for 2 minutes until fragrant.
Grind to medium texture (some seed particles remain).
Mix ground coriander, salt, black pepper, and garlic in a bowl.
If using juniper, crush and add now.

STEP 3: CURE THE VENISON
Place venison slabs in non-metallic container.
Pour vinegar over all pieces.
Sprinkle spice mix generously (be more generous than with beef – venison handles bold flavours).
Rub thoroughly, ensuring spice pe*******on.
Cover container.

STEP 4: REFRIGERATE (CRITICAL FOR VENISON)
Refrigerate for 24-48 hours (venison benefits from deeper cure than beef).
Turn and rub every 12 hours.
The longer cure = flavour development venison deserves.

STEP 5: PREPARE FOR CHAMBER
Remove from container.
Dab dry with a clean cloth (critical – venison is leaner).
S-hook and hang in KK chamber.
Space 2-3 inches apart for airflow.

STEP 6: CHAMBER SETTINGS (SLIGHTLY DIFFERENT FROM BEEF)
Set temperature: 20-25°C (slightly lower end than beef – venison is lean)
Set timer: 60-84 hours (venison dries faster than beef due to lower fat)
WATCH CAREFULLY after 60 hours (don't let it overdry).

STEP 7: MONITOR CLOSELY
After 60 hours, begin gentle squeeze tests every 6 hours.
Venison firms faster than beef. Overdrying is the primary risk.
Target: Firm exterior, slightly tender interior (less chew than beef is acceptable).

STEP 8: REMOVE & STORE
Once ready, remove immediately from chamber.
Room temperature: 2-3 weeks in paper bag
Refrigerated: 4-6 weeks in sealed container
Frozen: 3-4 months in vacuum-sealed (recommended for venison)

BILTONG-CRUSTED BEEF PIES – ELEVATED BY HOMEMADE BILTONG

Your biltong isn't just for snacking.

It's an ingredient. A flavor weapon. A way to transform ordinary dishes into restaurant-quality experiences.

These biltong-crusted beef pies prove it.
Rich beef filling. Tender pastry. Venison biltong woven through both.
Recipe by Hannah Lewry

INGREDIENTS (Makes 6-8 pies)

FOR PASTRY:
• 350g cake flour
• 200g chilled butter, grated
• 60g sliced biltong, finely chopped (YOUR homemade biltong works perfectly)
• 1 tsp salt
• 4 tbsp iced water

FOR PIE FILLING:
• 1.5kg bone-in beef shin, cubed (bones reserved)
• 4 tbsp cake flour
• 4 tbsp canola oil
• 90g sliced venison biltong (YOUR homemade biltong)
• 2 shallots, chopped
• 3 carrots, peeled and sliced
• 3 bay leaves
• 3 sprigs fresh thyme
• 3 tbsp tomato paste
• 3 tbsp Worcestershire sauce
• 340ml bottle beer (or non-alcoholic)
• 2 cups beef stock
• Sea salt and freshly ground black pepper, to taste
• 2 tbsp extra virgin olive oil
• 1 free-range egg
• 4 tbsp milk

STEP-BY-STEP METHOD:
1. MAKE THE PASTRY

Place flour and butter in a large mixing bowl. Rub the butter into the flour using your fingertips until the mixture resembles breadcrumbs.
Add your finely chopped biltong, salt, and iced water.
Knead on a clean, floured surface to form a ball.
Cover in cling wrap and chill for 30 minutes.

2. PREPARE THE PASTRY SHAPES
Roll out the pastry to 3mm thickness between two sheets of baking paper.
Cut out 6 rounds using a cookie cutter (slightly bigger than your muffin pan moulds).
Cut out 6 smaller lids for the tops.
Grease a muffin pan and line 6 moulds with pastry bases.
Prick a few times with a fork.
Chill bases and lids for 30 minutes.

3. BROWN THE MEAT
Dust cubed beef in flour.
Heat half the canola oil in a saucepan over medium heat.
Brown the meat and bones in small batches, adding remaining oil as needed.
Set aside the browned meat.

4. BUILD THE FILLING
Add butter to the pan.
Fry your sliced biltong for 1 minute (this infuses the sauce with biltong flavor).
Add shallots, carrots, bay leaves, and thyme to the pan.
Soften the shallots slightly.
Add tomato paste, Worcestershire sauce, and beer.
Using a wooden spoon, scrape the bottom of the pan to dislodge any meat.

5. SLOW COOK (THE PATIENCE PHASE)
Add stock and return browned meat and bones to the pan.
Season to taste.
Reduce heat to low.
Cover with a lid and cook for 2 hours.
Remove from heat and allow to cool slightly.
Remove marrow from bones, add to filling, discard bones.

6. ASSEMBLE THE PIES
Preheat oven to 180°C.
Spoon filling into each pastry base.
Top with pastry lids.
Crimp edges using a fork.
Cut a cross into the top of each pie.
Brush with egg wash.
Bake for 30-35 minutes, or until pastry is golden.

7. FINISH & SERVE
Allow to cool in tin for 15-20 minutes.
Carefully run a butter knife around pies to remove from tins.
Serve with hot chips and mustard.
