🥕 Curried Couscous, Carrot & Chickpea Salad 🌿

You’ll need:
• 200g couscous
• 40g olive oil
• Boiling water
• 3–4cm fresh ginger
• 30g red onion
• 120g carrot
• ½ green capsicum
• 50g dried apricots
• 50g raisins
• 50g raw cashews
• 400g canned chickpeas (drained)
• 1 tbsp curry powder
• Fresh coriander to garnish

Method:
1️⃣ Cover couscous with boiling water and olive oil. Cover and leave for 5–10 minutes.
2️⃣ Chop ginger, onion, carrot and capsicum.
3️⃣ Mix through apricots, raisins, cashews, chickpeas and curry powder.
4️⃣ Fluff the couscous with a fork, fold everything together and top with fresh coriander.

Save for a quick lunch idea! 💡
