Personally we brew using Tetsu Kasuya’s 4:6 method. Basically the first 40% of your pour adjusts the sweetness and acidity which you can control on your first and second pour. While the 60% adjusts the strength of your coffee, this will be your third to last pour. Using more water on your first pour will produce more sweet notes while using less will produce more acidity. The remaining amount of water is divided into equal parts to achieve a perfect brewed coffee. Here’s a sample recipe that we use:

15g coffee
225 water (95°c - 96°c)

0:00 45g (bloom)
0:45 45g
1:30 45g
2:10 45g
2:45 45g
3:30 total brew time
