Ingredients (1 Bowl)
4 oz cooked chicken breast, shredded (rotisserie or air-fried)
½ cup low-fat cottage cheese (blend if you want it extra creamy)

Instructions

Best No Pasta Protein Salad (Bariatric-Friendly & Low-Carb)
Ingredients
1 medium zucchini, spiralized or shredded
1 small cucumber, diced
½ red onion, finely chopped
1 red bell pepper, diced
1 yellow bell pepper, diced
¼ cup black olives, sliced
3 oz turkey pepperoni or lean salami, chopped
½ cup mozzarella pearls (or part-skim mozzarella cubes)
2 tbsp shredded parmesan
Dressing
2 tbsp olive oil
1 tbsp red wine vinegar
½ tsp Italian seasoning
Salt & pepper to taste
Steps
Prep zucchini and cucumber, then combine with all veggies, olives, and meats in a large bowl.
Add mozzarella and parmesan.
Whisk dressing ingredients, pour over salad, and toss well.

INGREDIENTS:
1 cup cooked shrimp
1 ripe avocado (diced)
1 cup cherry tomatoes (halved)
1/4 cup red onion (chopped)
Fresh cilantro (chopped)
Juice of 1 lime
Salt & pepper to taste
INSTRUCTIONS:
Cook the shrimp: If raw, sauté in olive oil with salt & pepper until pink and cooked (3–4 mins per side). Let cool.
Prepare veggies: Dice avocado, halve cherry tomatoes, chop red onion and cilantro.
