What's up? We are just chilling with our Full bodied Tesalia.
It has a deep ruby color with purple reflections. Aromas that surprise you from the first moment and develop continuously in the glass: spices, ripe red and dark fruits, and cedar joined by delicate lavender and to***co notes. A rich, concentrated mouthfeel is highlighted by layers of flavors such as plum, figs and blackberries with added impressions of herbs and spices. The wine has well-integrated tannins, balanced freshness, and a flinty minerality that provide exceptional length to the finish.

Brandy de Jerez or Sherry Brandy is a spirit produced by distilling wine, just like cognac, armagnac or grappa. You could say it’s a side product of sherry production as the barrels in which the brandy ages are first seasoned with sherry wine.

Like sherry, it needs to be produced within the sherry triangle formed by the cities of Jerez de la Frontera, Sanlucar de Barrameda and El Puerto de Santa Maria. Sherry brandy is protected by the D.O. Brandy de Jerez which has its own Consejo Regulador (regulatory council). In fact it is one of just three regulated kinds of brandy in Europe, together with cognac and armagnac in France.

Sherry is essentially a fortified wine, starting with a white wine to which extra alcohol (distilled grape juice) is added. It can only be produced in a small region in Andalusia, in South West Spain. The sherry triangle is formed by three key cities: Jerez de la Frontera (hence the name Jerez > Sherris > Sherry), Sanlúcar de Barrameda and El Puerto de Santa María. Besides this triangle there are six neighbouring municipalities that can produce (grapes for) sherry wines. Sherry is one of the oldest denominations of origin in Spain, founded in 1933

Not sure how long you can keep your Sherry? Follow these guidelines for the conservation and consumption of sherry wines:

Keep closed bottles in a dark, cool environment, in an upright position
Keep open bottles in the fridge, properly corked
Manzanilla and Fino are less stable than Amontillado, Oloroso, Cream sherry or Pedro Ximénez
Remember which type of sherry you’re dealing with, figure out the bottling date and try to find out the age of the sherry. This should allow you to make an educated guess about how long you can store (closed) or drink (open) bottles of sherry and how far you can deviate from the general guideline to drink sherry as soon as possible.

Wondered how the wine is stored and aged?
Here it is.
There's two different types of ageing
The biological ageing at 15° where the flor protects the wine from oxidation and the oxidative ageing at 17° without the flor, the wine is exposed to oxidation

Barros Soil is a rich, dark brown soil, 10 per cent chalk with a higher clay content and more organic matter. Barros are more fertile but also more difficult to work. This type of soil also has little moisture-retaining capacity due to a lower chalk content. It is prominent in low-lying valleys and at the foot of hills. Barros yield more grapes than albariza, but the quality is lower, so they result in a courser wine.

Do you know that the Sherry region is an area of open, rolling hills and gentle slopes and there's three soil types in the region.
Most of the land in the sherry region was once covered by an inland sea and is made up of marine sediments (fossils and skeletons of plankton, transformed into chalk), mixed with limestone and clay. The three types of soil in the Jerez district generally used for growing grapes are:

Albariza
Barros
Arenas

Interestingly, these three types of soils had already been identified by the Roman agricultural writer Lucius Junius Columella, who was born in Cádiz (4-70 AD) and talked about cretosi, sabulosi and palustres. It was the Spanish Esteban Boutelou who imposed the name albariza, thereby calling it by its colour rather than its major component (creta ~ craie ~ chalk).sherry
