Italian Balsamic Vinegar is about balance — origin, time, and the harmony between acidity and viscosity.

The word “balsamic” comes from the Italian balsamico, meaning warmth and harmony.
It doesn’t describe sharpness or acidity, but a gentle, rounded character that brings a dish together.

True Italian balsamic vinegar is made from grape must, slowly fermented and aged in wooden barrels. Its acidity is clear but never harsh, while its viscosity comes naturally from time — never from additives.

In Italy, balsamic vinegar is protected by law — IGP for everyday balance and versatility, DOP for traditionally aged expressions, used sparingly, drop by drop.

That is why not every dark vinegar can be called balsamic. When acidity and viscosity find their balance, balsamic becomes more than a seasoning — it is time and craftsmanship meeting at the table.
