🥖 “Why do I need to preorder days ahead?”
Because sourdough is delightfully stubborn.
It doesn’t care about my schedule, your schedule, or the fact that someone suddenly decided they need a loaf for dinner tonight. It runs on wild yeast and patience, and honestly... it’s a little feral.
🌾 Day 1: Wake the Beast
I feed my sourdough starter and let millions of wild yeast wake up, stretch, have breakfast, and get to work. No packets of commercial yeast here—just a bubbly little ecosystem doing its thing.
🤲 Day 2: Dough Day
The starter is mixed with flour, water, and salt, then I spend the day stretching, folding, and coaxing it along like a slightly dramatic toddler. By evening, every loaf is hand-shaped and tucked into the refrigerator for a long overnight nap where all the magic happens.
🔥 Day 3: Fire & Bread
The loaves come out cold, get scored by hand, and head into a blazing hot oven. A little steam, a lot of heat, and before long they’re sporting that crackly crust and chewy crumb you all know and love.
Could I rush it? Sure.
Would it still be Mama Jackie’s sourdough?
Not a chance.
Good sourdough asks for three days, strong coffee, flour in places I can’t explain, and just enough chaos to keep life interesting. Around here, we don’t hurry the bread—we let nature do what it’s been doing for thousands of years.
