I smiled when I read that Mars is using spirulina to replace artificial blue dye in M&M’s. Not because of spirulina itself. I’ve worked with spirulina for years. What caught my attention was everything happening behind the scenes to make that change possible.
According to the article, replacing one ingredient means higher costs, equipment upgrades, manufacturing challenges, and months of testing. All for a different source of blue.
It reminded me how easy it is to think of ingredients as just words on a label. They’re not.
Ingredients shape the product. They shape how it’s made. Sometimes they shape what can be made at all.
