So, goofy me forgot to share the recipe to create this dish. They are simple ingredient's of fresh kale, one can of black beans that you do want to rinse before cooking, one medium onion chopped chunky but not too big, 2 zucchini cut long ways 2xs. Each zucchini should render 4 slivers to then cross slice. The pieces will look like miniature pizza slices. Finely chopped, minced garlic, and olive oil to help the foods maneuver in the pot. Start with 3 tbsp of the oil on medium high heat. Make sure that the heat is not too high so that you won't scorch the vegetables. If it does get too high, then just lower the heat accordingly.
Add the entire bag of kale and stir fry. As the kale starts to blanche, add in the pre rinsed black beans and stir them as well. Let that just cook for 2 minutes. Next, add in the zucchini letting it cook for 3 minutes as well. You don't want the zucchini to get too mushy releasing its water into the kale where it can become watery. After letting the zucchini cook for about 3 minutes, then add in the onions and garlic to stir fry for about one minute. After that 1 minute of cooking the onions and garlic, remove the entire pot from the eye of the stove. This way the onions and garlic can cook to their optimal flavor from the heat of the food that is starting to lower.
This year minas is not an exact science so you are more than welcome to add or decrease as you see fit. Experiments and try adding other vegetables like Julienned carrots or yellow peppers for pops of color.
