This process is called “raising the grain”. It’s a minor detail that goes a long way. After sanding, you apply water which raises the grain of the wood. After this dries you sand it all down again. This step is essential in having a nice smooth board.

With proper care your cutting boards will last a lifetime. Make sure you oil your cutting boards, wooden spoons, and butcher blocks when they start looking tired. Monthly is the best bet.
