π PEACH COBBLER OAT BISCUIT BAKE
Warm maple-cinnamon peaches topped with soft golden oat-yogurt biscuits.
INGREDIENTS
For the peach filling:
β 450g ripe fresh peaches, sliced
β‘ 30ml pure maple syrup
β’ 15ml fresh lemon juice
β£ 1 tsp cinnamon
β€ 12g chia seeds
β₯ 1/2 tsp vanilla extract
For the oat biscuit topping:
β 180g oat flour
β‘ 1 1/2 tsp baking powder
β’ Pinch of salt
β£ 240g thick Greek yogurt
β€ 30ml pure maple syrup
β₯ 15ml melted coconut oil
INSTRUCTIONS
β Preheat oven to 375Β°F / 190Β°C.
β‘ Add sliced peaches to a bowl.
β’ Add maple syrup, lemon juice, cinnamon, chia seeds + vanilla.
β£ Toss gently until evenly coated.
β€ Spread into an 8 Γ 8-inch baking dish.
β₯ Mix oat flour, baking powder + salt.
β¦ Add Greek yogurt, maple syrup + coconut oil.
β§ Stir until a thick, soft biscuit dough forms.
β¨ Spoon exactly 6 biscuit mounds over the peaches in a 2 Γ 3 arrangement.
β© Bake for 25β30 minutes until the biscuit tops are golden and the peaches are thick + jammy.
βͺ Rest for 10β15 minutes.
β« Scoop warm, making sure each serving gets both biscuit + peaches.
YIELD: About 6 servings
π‘ TIP: Use ripe but still firm peaches so they soften without turning mushy.
π TEXTURE TIP: If your peaches are very juicy, let them sit with the chia for a few minutes before baking.
