White Clover Jelly Recipe
Ingredients:
2 cups of fresh white clover flowers (no stems, rinsed)
4 cups boiling water
1/4 cup of lemon juice (about 1 lemon)
1 package(1.75oz) powdered pectin
4 cups of sugar

Instructions:

Make the infusion:
- place the white clover flowers in a heatproof bowl.
- Pour the boiling water over the flowers and let steep for 12-24 hours
- Strain the liquid through a fine-mesh sieve or cheesecloth, discarding the flowers.

Prepare the Jelly
- Pour the clover infusion into a pot and add lemon juice.
- Sprinkle in the pectin and bring to a rolling boil stirring constantly.
-Bring back to a hard boil for 1-2 minutes, then remove from heat.

Jar the Jelly
- Pour hot jelly into sterilized jars, leaving 1/4 inch headspace.
-Wipe rims clean, place lids and process in a boiling water bath for 10 minutes.

Cool & Store
- Let the popping begin
- Let jars cool for 24 hours before checking seals.
- Store in a cool dark place, Refrigerate any unsealed jars and use within a few weeks.

Tips: IF you want a floral twist, add a few chamomile or honeysuckle flowers to the infusion ( has a honey like taste)

White Clover is popping up in my yard, What about yours? White clover is medicinal & edible. Its packed with Antioxidants, Vitamin A & C along with magnesium and calcium. You can cook it like greens or eat it raw some make a jelly out of it. It's good for circulation, detox, boosting immune system along with coughs and colds. If you decide to make a tea out of white clover you can add lemon, honey suckle or both to help the flavor.

Cleavers, AKA 'Sticky W***y', is back in our yard. Have you noticed it in your yard? It's a diuretic, really good for flushing the lymph nodes, kidney, liver and cleans the toxins out gently. You can make a tincture out of it using 85% or higher proof of vodka. You can also identify it because the plant will stick to your cloths.

Honey bee colonies in the U.S. are projected to decline by up to 70% in 2025, entomologists at Washington State University say.

The university said in a news release that in the past decade, honeybee colony losses have averaged 40% to 50% annually. But this year, a combination of nutrition deficiencies, mite infestations, viral diseases and possible pesticide exposure during the previous pollinating season led to higher losses, the release said.

Dandelion
It's a perennial native to North America, growing from a tap-root that reaches deep into the soil. It grows about a foot tall and flowers around April to June. Producing a yellow flower head. Leaves grow from the base of the plant in an elongated shape with jagged edges, resembling a lion's tooth, giving the plant its name.
- The entire plant can be used medicinally and also is edible
- Children help spread dandelions by blowing a puff of dandelion seeds in the wind to make a wish
-The plant is a great overall tonic and benefits the entire body. It's high in vitamins, minerals and antioxidants
- Medicinal use
- Roots are good for gastrointestinal and liver issues
- Leaves have a powerful diuretic effect
Edible use
-The entire plant is edible and nutritious
- Young leaves is best for greens, since the leaves become bitter with age. They can be ate raw or cooked.
- You can also batter the blooms with flour and corn meal and fry them in oil

If you do decide to harvest please be courteous leave some blooms for the pollinators and leave some roots to grow more for next year.
