If youโve been on our page for a while, you know about our sourwood honey harvest this year. If youโre a recent addition - welcome! Allow us to tell you about sourwood honey!
Sourwood honey is made from nectar of the flowers on the sourwood tree (๐๐น๐บ๐ฅ๐ฆ๐ฏ๐ฅ๐ณ๐ถ๐ฎ ๐ข๐ณ๐ฃ๐ฐ๐ณ๐ฆ๐ถ๐ฎ). Sourwood trees are native to North America, and are most common in lower chain of the Appalachian Mountains. Peak nectar flow occurs for roughly two weeks, and somewhere between 1600โ - 2300โ elevation. Location and timing are everything! Last year we attempted to catch the sourwood flow, and were unsuccessful, probably a little late and we heard later that it also wasnโt a good flow.
This year though? This year we feel like we caught lightning in a bottle! โก๏ธ๐ฑ Honestly, I donโt know that we will ever top this yearโs sourwood harvest!
To have a shot at a sourwood harvest, we first had to move some bees to the right spot. Our bees yards here in Sweetwater are around 900โ elevation. So, we loaded 18 colonies on a trailer and temporarily relocated them. Fortunately, friends in Coker Creek ๐offered to let us park our bees on their property again - 1700โ elevation, and in a lovely area surrounded by sourwood trees.
Robโs timing was a tiny bit early but really spot on - the bees had time to settle in before getting to work. And work, they did! Those girls brought in the BEST sourwood honey we have ever tasted! ๐ We quickly sent off a sample to a honey and pollen testing lab, and when the results came back we were floored: โ๐ฌ๐ ๐๐จ๐ฉ๐๐ข๐๐ฉ๐ ๐ฉ๐๐๐ฉ ๐ฉ๐๐๐จ ๐๐ค๐ฃ๐๐ฎ ๐๐จ ๐๐ก๐ค๐จ๐๐ง ๐ฉ๐ค 97% ๐๐ญ๐ฎ๐๐๐ฃ๐๐ง๐ช๐ข.โ ๐๐ป This is incredible - to be called any type of varietal, a honey only needs to have greater than 50% of a specific source variety (clover, tulip poplar, etc) - so to be this close to 100% is amazing. ๐คฉ
