“I don’t even like eggplant but this is amazing.” Heard that a few times yesterday when we served this roasted eggplant dish with harissa miso.

- 4 eggplants cut into thick cubes
- 2 tbsp miso
- 2-3 tbsp harissa hot sauce
- 4 scallions
- 1 tbsp sesame oil
- 1 tbsp of sesame seeds
- 3 tbsp soy sauce
- 1 tbsp rice wine vinegar

Preheat the oven to 425 degrees. Wash and cut your eggplant into nice size chunks- you don’t want them to get smushed when tossing in the dressing. Roast for about 25 min or until golden brown and tender. In a bowl, whisk all of the dressing ingredients together. Let the eggplant cool off and then toss into the dressing. You can serve it warm or cold. Enjoy!
