Okay here’s your weekly pastry update from Pavé. We have a couple of changes for this Saturday 9/12 as well as a surprise or two.

Apples have landed at the market so Apple Fritters are on the menu and we can’t wait to share them with you! Fluffy enriched dough and lightly sweetened apples seasoned with cinnamon and green cardamom then finished with vanilla bean glaze. So good.

As always, we’ll post the final menu for this Saturday 9/12 after our market run.
This will be a farewell to summer so come enjoy the last of stone fruit and berries before we transition to fall time flavors.

We’re incredibly grateful to be featured in nava⭐️ Los Angeles Times Food piece about protein habits and the way we think about food at Fountain.

Thank you, Nava, for taking the time to come hang with us, ask questions, and really understand what we’re trying to do.

And a huge thank you to our incredible guests, friends, neighbors, and supporters who continue to show up for us and believe in what we’re building.

We’re also endlessly grateful for the farmers, ranchers, producers, and distributors who make this little operation possible. We’re proud to work with people who care deeply about what they grow, raise, and bring into the world.

And to our team. ❤️

This crew does A LOT with very little. Every day they turn our tiny kitchen into a little whirlwind of delicious, wholesome food. The creativity, care, hustle, and dedication they bring to it is pretty damn special.

We started Fountain because we wanted to do things a little differently. Buy better. Work with good people who, through all the ups and downs, keep showing up and staying committed to feeding their communities. Support our local food ecosystem. Pay attention to where things come from. And ultimately, make something we’re proud to put in front of you.

We know there are easier ways to do this. There are cheaper ways to do it, too.

But we know it’s worth it.

It’s been far too long since I’ve made English muffins. These are Ciao Bella Breads | Britany recipe, but I subbed fresh milled local Sonora for the Einkorn because I had some already milled and I was feeling lazy😂 but now I know that Sonora works in these too! (And why wouldn’t it?😝). I like to roll mine in blue cornmeal because it makes them look so pretty!

Row 7 sweet garleek tostada

We are excited to feature Row 7 Seed Company sweet garleek on the menu through august 27! We made rajas. We are cooking down the garlic-leek hybrid in butter along with roasted poblano peppers until almost melted. Then binding everything together with creme fraiche. The dish is finished with both dehydrated and burnt garleek powder.

These are crullers with Sonora Wheat Tehachapi Grain Project and high protein bread from King Arthur Baking Company …. We love a cruller that has strong structure. You’re welcome 😉😂

Cruller is one of my favorite donuts and I feel like they are not getting enough highlights.

Okay, I think I just love anything fried 😂

But, look at these beauties just being beautiful.
