Happy Monday! 😄

Starting the week with cooler temperatures is always a win in my book.

Today is all about restocks, recipe development, and realizing that I somehow made it all the way to Lexington and back without stopping at Gordon Food Service. 😭

Oh well. There's always the next trip.

Our Strawberry Iced Cookies aren't simply an iced sugar cookie.

Take a look at the dough itself. Those little red specks are real freeze-dried strawberries blended directly into the cookie. Removing the moisture intensifies the strawberry flavor without adding excess liquid to the dough.

The cookie's texture is also different from that of a traditional sugar cookie. The dough is built on a base similar to that of a snickerdoodle, giving it a softer texture and a bit more chew.

Sometimes it's the details you don't immediately see that make all the difference.

This may surprise some people.

What you're looking at is vanilla bean material after months of extraction and filtering.

Many homemade vanilla recipes stop once the beans are chopped, covered with alcohol, and allowed to sit. There's absolutely nothing wrong with that approach, but I take mine a little further.

Over time, those ground vanilla pods continue to hydrate and expand. They absorb liquid, release flavor, and change dramatically from what they looked like when they first went into the jar.

Today I filtered another batch and recovered this entire mass of vanilla bean material. Most people would throw it away.

I don't.

The vanilla extract goes back to rest and matures. The vanilla bean material can still be used in other applications where texture isn't a concern.

What makes this process unique isn't the filtering. It's the time.

My vanilla spends a full year developing. During that time, I periodically separate the extract from the hydrated vanilla material, allowing me to continue extracting flavor while producing a smoother finished product. The vanilla bean material isn't discarded either. It can still be used in coffee, baked goods, sugars, and other recipes where texture isn't an issue.

I've found that vanilla rewards patience. The longer timeline allows flavors to develop, deepen, and mature in a way that simply can't be rushed.

Sometimes the most important ingredient isn't vanilla beans or alcohol.

It's time.

☁️ Rainy days and baking days seem to go hand in hand.

While some people are hoping for sunshine, I'll gladly take a cloudy sky and the sound of rain on the roof while the ovens are running. The best part? It appears that the weather will clear up just in time for deliveries and restocks as we head into the new week.

I survived Lexington. 😆

Every trip starts the same way...

"Let's run a few errands."

A few hours later:
🚗 Traffic
🚦 Traffic lights
🚙 More traffic
🤞 A little prayer
☕ Coffee helps

Then you hit those familiar rural areas with questionable two-lane roads and suddenly take the deepest breath you've taken all day.

There's no place like home.

Now that I'm back, it's time to get back to what we do best... baking sweet things and making the kitchen smell better than city traffic. 🍪❤️
