Here is something most bakers do not think about until it is too late. The flavor you add before the oven and the flavor that survives the oven are two very different things.

Extracts can burn off. Emulsions are water-soluble and designed to hold up through the bake. That is why your pound cake tastes flat sometimes even though you added plenty of vanilla.

The fix? Switch to an emulsion and watch what happens to your flavor depth.

Notebook paper cookies and pretzel pencils. I need everyone to stop and look at what is happening here.

The blue and red line detail on those sugar cookies. The chocolate pencil tip on the pretzel rods. The little pink eraser at the end. These are the kind of back to school treats that make people double-take because they genuinely cannot tell what they are looking at until they get closer.

This is creative baking at its best and it starts with having the right flavors to back up all that visual effort. A vanilla emulsion in the cookie base and a good chocolate coating on those pretzel rods makes every bite taste as clever as it looks.

A plate of apple sugar cookies and a cup of coffee. This is how the first day of school should start for every teacher.

These back to school cupcakes are giving everything they are supposed to give.
White buttercream, rainbow sprinkles, a little fondant apple, and a pencil perched right on top. These are the kind of cupcakes that belong on a first day of school table or in a teacher's lounge before the morning gets busy.
And here is what nobody talks about enough. The buttercream flavor is what people remember most. Not the topper, not the sprinkles. The cream that hits their tongue first. When that buttercream has real flavor depth from an emulsion, that is when people start asking who made these.
