SMOKY POTATO SALAD
You can completely transform a classic summer side dish into a bold flavor favorite without spending any time dicing fresh peppers or onions on a cutting board. By tossing warm, boiled potato cubes directly with mayonnaise and your seasoning mix, the real chunks of dehydrated vegetables rehydrate inside the creamy dressing, providing an instant savory crunch and a bright, tangy heat.

1 Tablespoon of The Smoky Spoon Seasoning Mix
2 lbs of Russet or Yukon Gold Potatoes
1 Cup of Mayonnaise
Cooking Directions
Boil the Potatoes: Peel the potatoes and cut them into uniform, one-inch cubes. Place the cubes into a large pot, cover them completely with cold water, and add a generous pinch of salt. Bring to a boil over high heat and cook for 10 to 12 minutes until the potatoes are fork-tender but still hold their shape.
Drain and Cool Slightly: Drain the potatoes thoroughly in a colander. Let them rest for 5 minutes so the excess surface steam evaporates. You want the potatoes to be warm when you mix them, as warm potatoes absorb flavors significantly better than cold ones.
Build the Creamy Dressing: While the potatoes drain, whisk your cup of mayonnaise and the tablespoon of The Smoky Spoon seasoning together in the bottom of a large serving bowl until smooth.
Toss and Rehydrate: Dump the warm potato cubes directly into the bowl with the seasoned mayonnaise. Use a rubber spatula to gently fold the potatoes into the dressing until every cube is completely coated.
The Chill Rest: Cover the bowl with plastic wrap and place it in the refrigerator for at least 1 hour before serving.
