Terroir is the French term for how climate, soil, geography, and growing practices shape a crop β€” it's why wine, coffee, and chocolate vary by region, and vanilla is no different. Papua New Guinea's terroir is volcanic richness meeting tropical intensity: it sits just south of the equator in the southwestern Pacific, with high humidity and steady rainfall year-round.

Mary's Rum Raisin Liqueur Extract is one of our favorite shares from the private Facebook group, Making Vanilla Extract by VanillaPura - and it's a versatile one, good in all kinds of breads and desserts.

Mary simmers raisins with cinnamon sticks, crystallized ginger, and a quartered VanillaPura vanilla bean, then stirs in sugar and rum - she uses Bacardi Gold - before letting it all rest in a jar for at least a month. Once it's ready, she strains out the raisins, bottles the liqueur, and keeps the rum-soaked raisins to use too.
