CONSISTENCY!
Here is a roast profile on Mistle-Joe done 10 times. Using strategies suggested by I'm better able to repeat the same roasts on a given coffee/blend to assure you get the same flavor every time.

Hello, all! Dropping in for a quick update.
We started farmer’s market at the end of May, and have been blown away by the love and support! We missed last week, but will be back this Saturday from 8am to noon! If you want to check the website, we’ve updated to make sure all origins and flavor profiles are up to date and detailed! Thank you all, again, for all the support!

One main question we’ve gotten from the farmers market is “how do you flavor the coffee?”
Answer: we don’t! Each coffee is roasted to get the best, most inherent flavors from each bean! Some are blends, some are roasted at a higher temp or for different lengths of time.
Every detail in the roasting process matters!

This was a cool pic to me because it’s showcasing so many moments throughout the roasting process! I get them green or “raw” and do my best to hit a variety of flavor profiles that you can enjoy in each cup!

I did something pretty exciting recently. I participated in a roasting competition with Bodhi Leaf Coffee located in California. There were a lot of other competitors and we all roasted the same coffee. It was super fun and I'm proud to say I placed in the top 10 and received great feedback from the QA team with Bodhi Leaf. Here's the feedback:

"Competitor, Blake Manning , [score] 86

Great job, Blake 👏 Super dynamic roast, plenty of sweetness and acidity. I personally wrote “no notes” when cupping your roast. Among the top scorers in this round, it was really a toss up of who was going to take the win in the public vote."

Roasting really good coffee is hard. There are so many things that can go wrong in the roast to make you miss your mark, and when I first started Two Pillars Coffee, it was hard to know if I was doing the right things... sometimes it still is 🤣
But it was a really good feeling to get great feedback from professionals in the industry! Thank you for your continued support, and know I'm always improving to bring you the best coffee I can!

These are a few mugs I’d suggest for your coffee or tea loving friends.

Left: screw top. Ceramic, double wall insulated, rather than stainless steel. Takes away the metallic taste and allows the bright flavors of specialty coffee to shine through.

Middle: double walled, ceramic. Looks nice and keeps your coffee warm!

Right: we love a handle. Also double walled, ceramic. Push closure lid to keep it hot and fresh!

I’ve used all of these for quite a while now- happy to answer any questions. Of course, you can add a bag of with your gifts this year!
