The last bowl on day four was as good as the first…………

Now I know we are 60 plus days away before most are going to be in the mood for such. Especially since it’s been around or above 100 here for three plus weeks. But kinda like football players start practicing before game day. Elizabeth pulled a two-a-day on Sunday and I see a championship in her future, at the very least a bowl game. She knows I’m a big fan of high quality soup. I guess it’s a I’m getting older thing. She whooped up a pot of old school potato soup and topped it with homemade sourdough croutons, sour cream and shredded cheese. Now it was good in its own right, but it didn’t win the game. Back in June we bought some sweet corn on the side of the road. When we got it home we shucked about half of it and cut it off the cob. She took some of that frozen corn and made a lobster corn chowder that was outstanding ……… after my second bowl all I needed to know was two things. Could she add this in our rotation and where did she put my fat pants? ………. Until Next Time

From the shores of Oklahoma……..

Elizabeth and I walked past a family of seven at the door who were waiting for a bigger table. We found a seat and set down in a corner booth next to the kitchen. As l looked around the dining room at what these two kids have done my eyes swelled up. It took everything I had to hold the tears in my eye lids. As I was fighting the tears back I noticed every table was full. I noticed all the patrons were smiling and enjoying conversation with their loved ones as they ate. Lynyrd Skynyrd was playing just loud enough to understand the words. The aroma of hot beef tallow, butter and garlic filled the air. It was only 5:15, I knew by the end of the night the mouth watering aromas were gonna conquer the air space away from the timeless band.

I didn’t raise any children. I do have two wonderful step children, but I missed out on getting to raise any. When Shirley, my first wife was diagnosed with ALS, it all began to make sense why we hadn’t been blessed with children. She and I had our hands full just trying to figure out how to deal with each new issue as it arose as her body began to change and not respond. After she had fallen a couple times and she had to wait on the floor for me to hurry home to help her up we had to have that difficult conversation. We realized we can’t do this alone anymore. When the first applicant failed by day three I started calling family. It’s funny how God works, his plans are always perfect. The trials and tribulations we go through are prerequisites for what’s ahead.

You see Scotty answered mine and Shirley’s call of distress. Scotty moved in and he and I became the two most unorthodox set of nurses you ever seen. Him more so than me because I still had to go to work. Caregiving is not for the faint of heart. A team of 10 trained nurses couldn’t have done a better job than he did. He would do Shirley’s hair, he watched you tube videos and learned to do her makeup, done her eye lashes. That shows someone’s heart. Who they are at their core. For two and half years he payed it forward day in and day out and he held her hand until his work was completed ………….

This is where the prerequisites come in. Scotty met and married the love of his life Sierra. She is too driven and hardworking. Those two bought a food truck roughly 18 months ago and hit the road in southeastern Oklahoma. They were grinding it out up and down the byways of Oklahoma making a name for themselves. Let me just say, their food speaks for itself! They put a lot of thought into the flavor combos. Putting new spins on old classics. They both have a passion for perfection. They created a following and decided instead of buying the cabana new tires………. It was time to create an HQ.

If you are looking for a place off the beaten path that has outstanding food………. Scotty’s Seafood Cabana & Grill in Quinton, OK. is worth the drive. They aren’t just slinging grub they are serving perfectly thought out entrees. The staff is wonderful, my glass was never empty and I drink a LOT of tea. Proportions are generous but more over the pricing is more than competitive when you price other seafood establishments. I had lemon garlic butter running down to my elbows. That spot on my shirt isn’t tea it’s butter! Then when Elizabeth and I were stuffed and throwing in the towel he set a slice of cheesecake down that had to weigh a pound. I highly recommend the cheesecake!! I know I am biased, but Scotty earned that in my eyes and heart years ago. Folks, I’m bald…… I’m not giving you hair advice, but as a fat guy I am telling you these two kids are serving up some major flavor with a eagerness to please. It’s worth the trip and tell him Uncle James sent ya! Scotty wasn’t a kid that needed raising by no means. But I know in my heart, that his stay with us, what he experienced, what he learned, what he witnessed and felt changed his trajectory for the rest of his life. Pay attention, Notice the most expensive dish on Scotty’s menu “The Shirley Platter”……….. Until Next Time

Last call for capitalism……….

I cut my teeth at the end of the h***y tonk era. I remember sneaking into a bona fide dance hall at the ripe age of 19 using a friend’s drivers license. I had memorized all the data on the license in case I needed to present my case with conviction since he and I looked nothing alike. I looked like an over grown baby faced 12 year old at the time and the dude on the ID had a full beard. Good thing the fella checking ID’s had glasses like Mr. McGoo. Nonetheless, I built a rapport with the ol fella all night long as I would leave the dance floor and go to and from the restroom. The next week…….he and I were on a first name basis. As I entered the establishment, I called him by his name and asked if he caught any fish since I seen him last Saturday night? I handed him my money and never pulled my ID out again, well not until I had my 21st birthday there two years later!

The thing about those days is there were choices. If you didn’t like the particular crowd in one dance hall. Well, get in the truck and go to the next h***y tonk. If they played the wrong music in that one or catered to line dancers then go to the next one. Side note, I never understood line dancing. If I wanted to dance by myself….. I would have stayed at home! As long as you were willing to pay your cover charge you could come and go as you please and patronize your establishment of choice.

This morning I realized how much I miss penny b**r night, ladies night(all the girls get in free), $2 well drinks or $1 long necks. Those things are the things competitive H***y Tonks did to earn your patronage. Instead, I felt like I was forced to enter an establishment and pay a $50 cover, buy $15 long necks while they played Achy Breaky Heart over and over as the dance floor filled up with big legged women line dancing.

You see Elizabeth and I are trying to get an electric pole set at the farm. We will change the names to protect the guilty……..Cooked Hills Electric! I don’t get a choice, if I want electricity, I have to buy it from them. Now, the guy who came out was awesome, but he don’t get to make the rules or set the prices. I have been paying my bill on time for 18 years. I have excellent credit with them, their words not mine! They are still gonna charge us between 3 to $5000 to set the pole for us to buy their product. That’s one heck of a cover charge! They aren’t paying for a live band or DJ either! Now I added up over that 18 years my electric bill has averaged roughly $275/month. Thats $59,400 . Now, that’s a loyal patron in my book who’s helping pay the light bill(pun intended). Heck I would buy that guy a round or two of whatever he is drinking every once in a while just to show my appreciation. They are gonna charge us around 8 to 9% of a 18 year spend in order for us to buy more product. That’s a heck of a business model. It’s basically take it, pay it or set in the dark.

Am I the only one who sees this as backwards? I done some asking around. It’s common for a pole to last as long as and up to 30 years. We the customers are having to pay for their infrastructure and labor up front and if you don’t buy a certain amount there is a minimum charge. No h***y tonk ever charged me on the way out the door for not drinking enough or for not scooting a boot. That would be like me charging our beef customers a land payment on top of the price of beef just so I have grass for the steers to graze. ………… Until Next Time

Y’all have heard me talk about my uncle Tommy Johnson before. I consider him an OG Influencer long before influencing was cool. Uncle Tommy was an Ag teacher in Atoka, Ok for years. Ag teachers back in the day were cut from a different cloth. They were educators in its truest form but your education came with manners, respect and work ethic. Something school systems and protective parents won’t allow these days. Atoka was a two Ag teacher program back in the 80’s. Uncle Tommy’s partner was a guy by the name of John Spencer. John was fresh out of college and Atoka was the first job he landed. John and his wife were just a few years older than the high school students he was teaching. The kids got to calling them Mee Maw and P*e Paw since they didn’t have any kids yet and the nicknames stuck.

Fast forward 40 years, I found a banker I could work with when Elizabeth and I bought the farm. He and I have built a rapport. He was always talking about his dad and his dad’s cows when I was in the bank visiting. One day I asked him what his dad’s name was? He said John Spencer. I said your dad is P*e Paw? Brent’s chin hit his desk. He said I haven’t heard him called that in years. He said how do you know him by that name? Then I explained I met John when I was a kid hanging around my cousins at stock shows. At that moment I realized my banker was one of the two ornery boys spawned from Mee Maw and P*e Paw.

One day while visiting with Brent I noticed a very nice tooled leather briefcase in his office. I don’t consider myself bougie……. but I do like high quality craftsmanship and things that are unique and not mass produced. Things that are built to last and that are truly one of a kind because an artist hands can’t duplicate exactly. Things that gain character and uniqueness as they age. I asked where he bought it? He said I didn’t, dad made it. Then I asked how do I get on P*e Paws list?

If you can get on his list…….the craftsmanship is superb. The mass produced Bob Timberlake Bass Pro Shop special I have been carrying for 13 years isn’t half the briefcase John makes. At 52, I would suspect this one will definitely get me to retirement. The world is small when you take time and talk to people and learn their network. Hand made goods are the things of yesteryears because of fads, marketing, and mass production. This definitely isn’t mass produced. Now I know some of ya want’a call it a man purse……… but when you add the branded creek and butt cheeks, it’s really a next generation f***y pack…….. Until Next Time

I’ve always said I don’t need a camper, a swimming pool or a boat……. I just need friends that have one. Well Elizabeth went to Florida this week to visit the kids. While she was gone I turned our lil farm into a hillbilly paradise. Our farm is 30 miles from the house so the camper will be used immensely just to save time, miles and sleep. Our lil paradise is equipped with a hot water soaking tub(solar of course) two showers and a freshly scrubbed 1000 gallon swimming pool ………..clothing optional. The thing about swimming in your friends pool…….they typically require swim wear. The cattle don’t seem to mind our cheeks one bit. We are like two young kids on a road trip with a new toy but getting work done at the same time. If I would have known it was gonna be this much fun we would have done it sooner. We get a lot of lookers going down the road with “Between the Creek and the Cheeks” down the side of the truck. Wait until we put “Soggy Bottom Wrasle Castle” on the back of the trailer……..Until Next Time

The Butt Behind the Brand…….

She might be known as “The Butt Behind the Brand”, but she’s so so much more. She’s the calm in the storms I create. The fire extinguisher to my hot temper. She’s also management, she hired me to help in real estate but fired me on my first deal. After she realized I was gonna file unemployment………. She hired me back, but only if I agreed to be on a “PIP”. I had to google that one to find out she put me on a personal improvement plan. So I guess I could say she’s responsible for my professional growth as well.

She’s in charge of my wardrobe maintenance. In six years I have never not had clean underwear or socks. You can bet if I wake up one day and I don’t have them, I’m rolling commando and in sandals because I want to give her time to regroup. Her domestic skillset is honed far beyond her years. She’s also responsible for the quality of my nutritional intake. Her entrees are not on rotation. It’s always something new and exciting at meal time. It’s like I live at a Michelin restaurant. She has made me shrimp and cheesy grits with poached eggs and grilled asparagus for breakfast before.

She’s the boss but says I’m the bossy one. She has no problem with me being in front trying to be the lead singer of our duo….. but folks I promise you she is the one in the background on the drums keeping the beat on time in all our gigs. She wanted a mutt I didn’t have a use for. The woman is allergic to dogs! But she has trained the dog to understand everything she needs. He has a tendency to always hug her at the appropriate time. It might behoove me to follow the dogs lead. I’m just a dumb ol country boy, but I am smart enough not to make her choose between me and the dog.

Getting the winning ticket to a front row seat in her world reminds me daily Jesus does love me. Her faith is the strongest I’ve ever seen. Her knowledge of scripture amazes me. She’s a prayer warrior like you can’t believe. The conviction in her prayers leaves me thirsting for more spiritual nourishment.

We are in a season of our lives where the things we have been chasing for decades don’t seem to matter anymore. Time never stops ticking away. None of us knows what tomorrow brings, laughter or loss. One thing I do know, life is so enjoyable when the one you are yoked to is the one that brings laughter and happiness to every moment. Elizabeth, life has been kind to you. 51 looks so amazing on you. Thank you for allowing me to dance through life with you. Sugar hold on, I just filled the juke box with quarters, we are just getting started………Happy Birthday!!!

Watch your head……….

My phone rang this afternoon. I was on the other line so I missed the call. I didn’t recognize the number but I called it back. I said I had a missed call from this number. The person on the other end asked if this is Mr. Burgess. I said no sir, it’s James. I could tell it was a younger person on the other end. He said this is Paden, I’m at your place delivering feed. I said okay how’s it going? He said well sir not to good. He said, sir I drove through the blue gate. Then I replied calmly………you didn’t drive all the way through it. He apologized and more importantly owned the fact that he didn’t read all the information on the ticket that said use the 40 foot gate. Right there, this twenty something year old owned his place and owned up to the situation. So I called my feed guy asking how he was doing? Brett already knew the situation and I could tell he really wasn’t having a good Monday. He explained they would send out a welder to patch it up in the morning. Well the driver couldn’t shut the gate due to the cross bar. So the Co-op scrambled a welder in minutes. I headed to the farm to get the tractor so I could pick up the pipe and the welder in order to get it in place.

I am proud to do business with people who own their place and correct any problems in a timely manner. I told the kid, if you ain’t making mistakes, you ain’t working…….. Soggy Bottom Cattle Co may have been taken to its knees today by an accident, but the Farmers Co-op patched us back up and left our place better than they found it ………Until Next Time
