Oh to be a happy seal whose only definition of “circling back” involves swimming. 🦭

Vacation mode has helped me slow down and really absorb my surroundings. As I adventure across the Pacific Northwest, I’m awestruck by the magnificence of nature that surrounds such vibrant cities. I can’t get enough of seeing mountainous horizons, smelling the ocean… even hearing the seagulls. 🌊

What a stunning area to explore, and what a great reminder to turn off autopilot more often. You never know what wonders of nature you’ll catch.

After a week of answering the daily, “What’s for dinner?” We’ve got tonight’s inspiration covered.

Take advantage of the Whole Foods 12 oysters for $12 Fridays and bring the coast to your table… no matter where you are.

🧊 Prepared Raw🧊

🦪 Prep the mignonette: Mince 1 large or up to 4 small shallots & combine with 3/4 cup of champagne or white wine vinegar and coarsely ground black pepper in a small bowl. Refrigerate for at least 30 minutes.

🦪 Scrub the outside of each oyster thoroughly in cold water to remove sand, dirt and grit. Discard any oysters that aren’t tightly closed

🦪 To shuck, push the tip of an oyster knife or thick paring knife firmly into the center of the hinge and carefully twist until it pops open. Discard the top shell and run the knife under the oyster meat to separate, preserving the natural juices as much as possible.

🦪 Serve: Pack a serving platter with crushed ice and arrange the oysters so they remain level. Add a spoonful of mignonette sauce and a squeeze of lemon to each oyster and enjoy! 🍋

🔥Oysters Rockefeller🔥

🦪Clean & shuck oysters as noted above.

🦪 Melt 4 tbsp of butter in a skillet over medium heat. Sauté 2 minced shallots and 2 minced garlic cloves until soft. Add a cup of chopped spinach. Once wilted, add a generous squeeze of lemon, a splash of Pernod or white wine, and 1/2 a cup of heavy cream. Simmer until the sauce reduces slightly, then mix in 1/2 cup of Parmesan or Romano cheese.

🦪Spoon a generous amount of the mixture over each oyster and sprinkle panko breadcrumbs on top.

🦪 Either grill or bake (~400°) for 8-10 minutes or until bubbling. Or broil for 2-3 minutes until golden brown.

Pair the oysters with grilled asparagus and a crisp glass of Sancerre or Chablis for a delightful summer dinner.
