Amber is awesome! She's good people 💚 if you enjoy animals and books 📚, she's your gal. Amber is kind, supportive and funny! She runs an online book club and also has great book recommendations! I never make my corn bread the same- I'm always throwing in something different. Tonight I used pecan flour because going through the pantry I only had a cup left- so I threw it in the corn bread. It was good. Very hearty!

Ingredients

1 cup cornmeal- (I used buttermilk)
1.5-cups all-purpose flour
1-cup pecan flour
2 tablespoons sugar (optional, but I’d use it)
1½ teaspoons baking powder
½ teaspoon baking soda
¾ teaspoon salt
2 large eggs
1 cup buttermilk
1 cup creamed corn
4 tablespoons melted butter

2 tablespoons honey (optional, but wonderful with the pecan flavor)
Also optional- 2-4 jalapenos depending on size and spiciness desired!

Make it;

✨Heat your oven to 425°F. Put your cast-iron skillet in the oven while it heats. That hot skillet is the secret to a beautiful golden crust. I used a 10 inch pan- you could also use a 12". 🍳

✨In a bowl, whisk together the cornmeal, flour, pecan flour, sugar, baking powder, baking soda and salt. (Dry bowl) 🥣
In another bowl, whisk the eggs, buttermilk, creamed corn, 3 tablespoons melted butter and honey. (Wet bowl) 🥣

✨Pour the wet ingredients into the dry. Stir just until combined. Don't beat it smooth—overmixing is one of the easiest ways to lose that fluffy texture!
(I also mixed in minced fresh jalapenos!)

✨Carefully!!! pull out your hot skillet. Add a tablespoon of butter and swirl it around the bottom and sides.
Pour in the batter. You should hear a gentle sizzle when it hits the skillet. 🤤

✨Bake at 425°F for about 20–30 minutes, until the top is golden and a toothpick inserted in the center comes out with just a few moist crumbs.

Another great twist. Is your regular cornbread recipe with tiny chopped pecans- that also gives a nice nutty flavor. 😉

Let it sit for 5–10 minutes before slicing.

Baked goods for the farmers market this coming Saturday morning at Spring City Farmer’s Market on front Street.
I'll be making, what I'm now calling
"Knockdown honey buns."
There's a funny story here 😂
✨ The 3 families I tested this recipe out on ALL said there was domestic disputes about who got the last honey bun 😂
And for those of you disappointed last market that I didn't make them-
I will be making croissants.

The kids had picked a flower with the butterfly on it and it stayed. They brought it inside and asked if they could keep her.
I told them no, but if they gave her food and water they could watch her for a day while she rested. They left the lid off so she could leave if she wanted, but made her a feast 😄💚

I had someone come up to me about a month ago and ask about shorgum syrup...
I'm still waiting.
I cut one and tested it today.
It's getting there- it was sweet- but not sweet enough and not juicy enough yet either.
So if you're seeing this- I'm impatiently waiting as well- but still not ready for harvest.
Definitely time for me to be engineering a press. My experimental patch -hopefully will yield about a gallon- which is a good start and so far is staying on my "plant way more list" for next year.

This was the last flip on the cheese before pressing one last time and the Gouda curd was just so sticky the whole time? Is this normal?
This is my 1st year making cheese a lot of things to learn but how else do you learn! A LOT of times it's trial by error- and you have to be ok with the fact that you're going to fail and that's definitely how you learn what not to do for sure 😄 but it's also how you become better! And always ask questions! Not everyone can know everything. Remember that 💚 and be kind to yourself when learning new things ☺️

I finally decided to make Gouda. It's one of my favorite cheeses! So of course I wanted to try my hand... The turning and pressing process has been going less than smooth 🤦 the curd is REALLY sticking to the cheese cloth in-between the pressing! So much so I had to use new cloths in-between pressing and flipping...I'm trying to make it not look like a feral racoon made this wheel- but it's not going well!
Is there a secret I'm missing?
