Posting some simple kid friendly/helper recipes !!!

1 egg plant ( or you can use French bread or even hamburger buns if your kids don’t like eggplant)
2-3 Diced fresh tomatoes
Cheese (we used TraderJoe's Quattro Formagio)
Fresh basil
2 tsp of balsamic or white balsamic vinegar
Pepperoni (optional)
1 tbsp Olive oil
1 tsp Garlic powder
Salt and pepper to taste

-Preheat oven to 425
- combine olive oil, garlic powder, salt and pepper
-slice eggplant or bread place on sheet tray
-brush eggplant with oil mixture
- roast about 5 min while you prepare the tomato mixture using diced tomatoes, fresh basil, and any left over olive oil mixture , vinegar and salt and pepper to taste .
- remove eggplant from the oven and top with tomato mixture , cheese and pepperoni if you choose
-finish roasting until cheese is melted !

Hello everyone ! I just wanted to announce that with all my 100% cotton scrap fabric I am making face mask! They are the same pattern that is being donated to hospitals in my area ! I wanted to offer these to the community as well! If I have to ship I only ask that you pay for the shipping which would be around $5 ! Please limit yourself to 5 masks !

*elastic is like gold right now so some masks will be made with cord and some with 1/4” elastic.
