It's Wecipe Wednesday! Last month, I tested four different apple hazelnut desserts and found two absolutely scrumptious cumbles.

For the apple filling, I had a clear favorite between the two: half sour apples, half sweet, yes to lemon, light on the sugar and cinnamon.

For the toppings I truly couldn't pick, so I combined them into one mighty dish with two halves and bang I think I'll just keep making it like this!

The bottom half: Crispy, oaty, a little chewy, gluten free
The top: Sweet, fluffy, buttery, a bit cakey

I made the same dressing twice, once with olive oil and once with hazelnut oil. Can you spot the difference?

After a couple of days in the fridge, the hazelnut oil dressing stayed liquid, and the olive oil dressing solidified.

Why does this happen?

Hazelnut oil is primarily composed of heart-healthy, omega-9 fatty acids, with half the saturated fat of olive oil. Saturated fat hardens at higher temperatures (think butter at room temp), causing the olive oil dressing to solidify in the fridge.
