Greek Chicken Salad Flatbreads 🥗🫓
Warm flatbread, creamy spread, and a crunchy Greek salad piled high.

You’ll Need (serves 4):
• 4 small flatbreads or mini naans
• 2 cups cottage cheese
• 1/3 cup crumbled feta
• 2 cups cooked chicken, chopped (about 10–12 oz)
• 2 cups chopped romaine
• 1 cup cherry tomatoes, halved
• 1/2 cucumber, diced
• 1/4 cup red onion, thin sliced
• 1/3 cup Kalamata olives, sliced
• 2 tbsp olive oil
• 1 tbsp lemon juice
• 1 tsp dried oregano
• 1/2 tsp salt
• 1/4 tsp black pepper

Optional:
• Extra feta on top
• Sprinkle of dried dill
How to Make it:
1. Blend cottage cheese until smooth and creamy.
2. Stir in feta. Set aside.
3. In a bowl, toss romaine, tomatoes, cucumber, onion, and olives.
4. Add olive oil, lemon juice, oregano, salt, and pepper. Toss again.
5. Warm flatbreads in a dry pan 1 minute per side (or 10 seconds in the microwave).
6. Spread the cottage cheese mix on each flatbread.
7. Pile on the salad and top with chicken. Serve right away.

Tip:
Keep the salad and spread separate until you eat, so it stays crisp.
