🌯 The Easiest Copycat Taco Bell Enchirito you'll ever make!
Seasoned beef and refried beans wrapped in soft tortillas, smothered in rich red chile sauce, and topped with gooey melted cheese, this homemade Enchirito is pure comfort food!
Ingredients:
Filling:
1 lb ground beef
1 (15 oz) can refried beans
1 tsp onion powder
1 tsp garlic powder
Salt and pepper to taste
Red Chile Sauce:
2 tbsp chili powder
1 tsp ground cumin
2 cloves garlic, minced
2 cups chicken or vegetable stock
Salt to taste
Assembly:
4 large flour tortillas
1–2 cups shredded cheddar cheese or cheese blend
12 sliced black olives
Optional: sour cream, chopped cilantro
Directions:
In a saucepan, toast chili powder, cumin, and garlic for 1 minute.
Gradually whisk in stock and simmer for 10 minutes until slightly thickened. Season with salt.
Brown ground beef in a skillet and drain excess fat.
Stir in refried beans, onion powder, garlic powder, salt, and pepper. Heat through.
Spoon filling onto each tortilla and roll burrito-style.
Place seam-side down in a baking dish.
Pour red chile sauce generously over the enchiritos.
Sprinkle with shredded cheese and add a little extra sauce on top.
Broil for 1–2 minutes until cheese is melted and bubbly.
Garnish with black olives, sour cream, and cilantro if desired. Serve hot!
