All this painting of cookies inspired me to bake some cookies! First attempt at the Italian butter sandwich cookie. These bad boys are filled with raspberry jam, dipped in chocolate and then covered in sprinkles!

Playing with complimentary colors and getting inspired by soft pistachio greens, warm creams, the occasional cherry red for a vibrant pop. Selecting the color palette for a collection — considering the printing, the foil embellishments, and the envelope colors — is hands-down one of the most fun parts of design designing a collection.

Yall, let me tell you about my favorite things ever.
#1. Pignoli cookies: Pinolate (or pignoli) are traditional Italian cookies made from almond paste, sugar, and egg whites, coated in pine nuts. The best are crunchy on the outside and soft and chewy on the inside.
#2. Butter cookies: Comically, I ask for the butter cookies filled with raspberry and dipped in chocolate because I honestly don’t think they have another name. They are tender, rich cookies piped into shapes (like twists or shells), sandwiched with sweet raspberry jam, and then dipped or drizzled with melted chocolate, often finished with sprinkles for a classic look, requiring simple ingredients like butter, sugar, flour, and flavorings. Also come in chocolate, also delicious.
#3. Rainbow cookies: also known called Seven Layer Cookies, these are classic, almond-paste-based treats with red, white, and green layers of cake, separated by apricot or raspberry jam, and usually coated in chocolate. Despite the name, they’re more like a petite cake, offering a unique almond flavor with fruity hints and a rich chocolate finish.

I grew up eating these so I’m curious, have you had them before?
