Not all cuts are equal. Where a hide comes from changes everything about how it behaves, what it's suited for, and how it'll hold up over time.

Butts → belts, holsters, saddlery. Densest cut on the animal.

Shoulders → knife sheaths, small bags. Great entry point.

Sides → versatile. Half a hide for mixed projects.

Bellies → practice, linings, small pieces.

Full hide → upholstery, furniture, automotive.
