cranberry scones
Ingredients
3 cups cake flour
3/4 cups cold butter
3/4 cups cold buttermilk
1 egg
1/4 cup white sugar
1/3 cup dried cranberries
4 tsp baking powder
1 tsp vanilla essence
1/4 tsp salt

Instructions
1. Preheat the oven to 190 Degrees Celsius/ 374F.

2. In a large bowl sift in flour , baking powder, sugar and salt .

3.Grate the cold butter. Rub in the butter using your finger tips until you get a crumbly texture ( sand like ) .

4. In another bowl whisk in buttermilk,vanilla and egg together . Then pour to the dry ingredients mixture.

5.Mix the wet and dry ingredients together.

6.Slightly flour your work surface . Transfer the dough to the work surface then gently bring it together.

7. Add the cranberries to the dough and fold the dough twice . And gentle press it .

6. Use a round cookie cutter to cut the dough or cut into triangles then slightly brush each piece with an egg white .

Bake for 22-25 minutes or until lightly golden brown on top .

Tip : You can replace the cranberries with raisins. If you donโ€™t have any dried fruits just use this recipe to make buttermilk scones โค๏ธ.

Melting Moments
Ingredients
1 & 1/2 cups All purpose flour
1/2 cup cornflour (corn starch)
227g (1 cup) softened unsalted butter
1/2 cup icing sugar (powdered sugar)
1 tsp vanilla essence
1/4 tsp salt

Instructions
1. In a large bowl add butter and icing sugar then beat or mix until itโ€™s light and creamy.

2. Add vanilla then mix .Sift in flour ,cornflour and salt. Mix until all the ingredients are well combined.

3. Transfer into a piping bag with a star tip . Pipe carefully and neatly on a lined baking tray.

4. Bake in a preheated oven at 170 Degrees Celsius for 15-18 minutes or until golden brown and well baked .

If you are using salted butter please donโ€™t add salt.

Lemon & Poppy Seeds Scones
Ingredients
3 cups All Purpose/Cake Flour
1/4 cup white sugar
3/4 cup cold unsalted butter
3/4 cup cold buttermilk/amasi
1 egg
3 tbsp lemon zest
3 Tbsp baking powder
1 Tbsp poppy seeds
1 tsp vanilla essence
1/4 tsp salt

Instructions
Preheat the oven to 190 Degrees Celsius(374F).

1. In a large bowl sift in flour , baking powder , sugar and salt . Then add poppy seeds and whisk them well in .

2. Add lemon zest and butter , then rub in the butter using your finger tips until you get a crumbly texture ( sand like ) . The butter should be cut into small cubes/grated.

3. In a small bowl whisk in the buttermilk ,egg and vanilla together. Then pour to the dry ingredients mixture.

4. Mix the wet and dry ingredients together. Donโ€™t over mix.

5. Slightly flour your work surface . Transfer the dough to the work surface and use a cookie cut to cut out the dough.

6. Slightly brush each piece with an egg wash .

7. Bake for 22-25 minutes or until lightly golden brown on top .
