Sweet chilli goodness packed into a loaded chicken and veggie pie with that signature Flaming Koala flavour hit.

These aren’t your average servo pies. These things are proper loaded flavour bombs made fresh by one of the best pie shops around. The owner at Pie Time Underwood absolutely knows how to make a killer pie, and honestly… these are straight-up dangerous once you’ve had one. 🤤🔥

FLAMING KOALA STICKY FRIED RICE

🥩 Ingredients (2–3 serves)
Base
2 cups cooked jasmine rice (cooled — critical)
400–500g chicken breast or thigh (diced small)
1 cup frozen spring greens mix
5 medium onion (diced)
4 or 5 eggs
Sauce / Flavour
150ml Thai Me a River hot sauce
1–2 tbsp soy sauce
1 tsp fish sauce (optional but game-changing)
5 tsp garlic (powder)
½ tsp white pepper
5 tsp Smoke paprika
5 garlic cloves
4 shallots stems
Oil
2 tbsp oil (extra virgin olive oil)

🔪 Prep (Important — don’t skip)
Cook rice first → cool completely (this stops mushy fried rice)
Dice chicken into small cubes (faster cook, better texture)
Dice onion medium size
Beat eggs lightly

🔥 Cooking Method (Step-by-Step)

1. Cook the chicken
Heat pan/wok high heat
Add oil
Add chicken + seasoning
Cook until ~90% done
👉 You want slight browning — not boiling it

2. Add onions
Throw in diced onions
Cook until caramelised (light brown)
👉 This is where flavour builds — don’t rush it

3. Add vegetables
Toss in frozen veg
Stir fry 2–3 mins until heated through

4. Add rice
Break up rice before adding
Toss into pan
Stir fry hard (high heat)
👉 Goal: slightly dry + separated grains

5. Add eggs
Push everything aside
Pour egg into pan
Scramble, then mix through

6. Add sauce
Add:
Thai Me a River
Soy sauce
Fish sauce (if using)
Toss everything together
👉 Let it fry a bit — don’t just mix and stop

7. Final fry
Let it sit in pan briefly for slight crisping
Toss again

Serve with a coldy or a drink of your choosing
