Weeknight dinner and nobody can be bothered? 😅🌮✨

These air-fryer chicken taquitos from Woolworths are one of those recipes that look like you tried a lot harder than you actually did. Crispy, cheesy, and ready in about 30 minutes. 😌🔥

Recipe below 👇

Ingredients:
🍗 1 Woolworths Country-Style Roast Chicken
🧀 125g Woolworths Smokey Chipotle Cheddar & Tasty Cheese Shredded Blend
🍅 375g Woolworths Medium Tomato Salsa
🌮 10 tortillas
🫒 Extra virgin olive oil cooking spray
🥑 1 avocado, diced
🧅 ½ small red onion, finely diced
🌶️ 1 jalapeño chilli, thinly sliced
🌿 ¼ bunch coriander, leaves picked

👩‍🍳 Method

1️⃣ Remove and discard the skin and bones from the chicken. Shred the meat and place in a bowl. Add the cheese and ¾ cup salsa, then mix to combine.
2️⃣ Spoon about ⅓ cup of the chicken mixture onto the centre of a tortilla. Fold in the sides and roll up tightly to enclose the filling. Repeat with the remaining mixture and tortillas.
3️⃣ Working in batches, place the taquitos in a single layer in the air fryer basket. Spray with oil and cook at 200°C for 10 minutes, turning halfway, until golden and crispy.
4️⃣ Combine the avocado and red onion in a bowl. Place the remaining salsa in a serving dish. Top the taquitos with the avocado mixture, jalapeño and coriander, then serve with the extra salsa.
