Sudanese coffee is almost never served without ginger, and the reason goes back centuries.

Sudanese hosts brew guhwah in a red clay pot called a jebena, spiced with cardamom, black pepper and ginger. The spicing came from trade routes that ran straight through Sudan, and it turns a simple brew into something distinct from every neighbouring coffee culture.

Cinnamon and espresso have no business tasting this good together, and yet.

This spring, a vanilla yoghurt coffee cake with a spiced Hennessy Classic espresso crumble and coffee glaze is the recipe worth trying first. The espresso cuts through the sweetness instead of hiding behind it, so every bite tastes like coffee, not just cake with a hint of it.

You'll need:
For the cake:
- ¼ cup dark brown sugar, packed
- ¼ cup caster sugar
- 1 tsp bicarbonate of soda
- ½ tsp baking powder
- 2 cups plain flour
- 2 tbsp Hennessy Classic, finely ground
- 1 tsp cinnamon
- 5 tbsp unsalted butter, room temperature
- 1 tsp vanilla extract
- ¼ cup vanilla yoghurt
- ¾ cup whole milk
- 1 egg, room temperature

For the espresso crumble & glaze:
- ¼ cup dark brown sugar, packed
- ½ cup caster sugar
- 3 tbsp plain flour
- ½ tsp cinnamon
- 3 tbsp butter, room temperature
- 2 tbsp brewed Hennessy Classic espresso
- 1 cup icing sugar

Around thirty minutes in the oven, with the rest of the time hands off.

The first cup is never the last, and each one means something different.

An Eritrean coffee ceremony comes in three rounds. The first, awel, is the strongest. The second, kale'i, follows. The third, baraka, means blessing, and marks the end of the gathering.

Roasted barley snacks called dabo kolo are passed around between rounds, balancing the coffee's bitterness and stretching a drink into an entire shared occasion.
