Matt has officially gone rogue, and we have Dave from CLEAVER Salumi Cabinets to thank! After the demo this last weekend, Matt caught the curing bug hard and just had to have a play.

The First Attempt
A classic Saucisson Sec style salami that absolutely nailed the landing. It hit a perfect 35% weight loss thanks to the consistency of the Cleaver Salami Cabinet we have here on display in-store and it went straight into a vac bag to equalize. (Drool over that cross-section just look at the colour & marbling 🤤)

The Monster

We are hosting our very first Salami Making Demo with the absolute master of meats, Dave, the founder of CLEAVER Salumi Cabinets. He's rolling into Wat's On The Grill & Country Brewer Toormina tomorrow, Saturday the 29th of August, for a 1.30pm kick-off🏉
Give us about 90 minutes of your time, and Dave will demystify the art of turning good pork into great salumi.
