A classic favourite made easy š

Slow-Cooker Self-Saucing Sticky Date Pudding šØ
Serves 8 | Prep 10 mins (+ 10 mins standing time) | Cook 1 hour 40 mins
Ingredients:
200g Coles Pitted Dates, finely chopped
1 tsp Coles Bicarbonate of Soda
1/2 cup (125ml) boiling water
1 1/4 cups (200g) Coles White Self Raising Flour
1 1/2 cups (295g) Coles Brown Sugar
2/3 cup (160ml) Coles Full Cream Milk
1 Coles Free Range Egg, lightly beaten
50g Coles Unsalted Butter, melted
1 tsp vanilla bean paste
25g Coles Unsalted Butter, chopped, extra
2 cups (500ml) boiling water, extra
Coles Vanilla Ice-cream, to serve
Method:
1. Spray the inside of a slow-cooker bowl. Add dates, bicarbonate of soda and boiling water and stir to combine. Stand for 5 mins, stirring occasionally, or until water is absorbed.
2. Add the flour, ½ cup (110g) of the sugar, milk, egg, melted butter and vanilla to the slow cooker. Stir to combine. Use a rubber spatula to clean the sides of the bowl.
3. Sprinkle remaining sugar over batter and top with chopped butter. Using the back of a spoon, carefully pour extra boiling water into the slow cooker. Cover with lid and cook on high for 1 hour 40 mins or until a crust forms and top springs back when pressed with finger.
4. Serve pudding with ice-cream.
