My little girl turns 4 today and I decided to put a bit more effort into her cake since I’ve been slacking lately. This cake is super easy to achieve and is really striking. And it has glitter! Everything is better with glitter especially if it’s edible.
For this I did my standard chocolate cake and Swiss meringue buttercream. A bit aside a little that I dyed pink (Pro tip: I normally use gel colours but I’d you can get them, oil based colours work best in buttercream because they bind with the fats much better. They are more expensive and there is a smaller range of colours but they work so well! I often end up with mottled looking buttercream where the colour has separated somewhat from the buttercream when I use gel colours). The rest I dyed blue and then combined a little blue and some pink to make purple.
Once I had the cake perfectly iced and chilled I used a template that I printed off the computer onto some card and then cut out with a craft knife so place over the sides of the cake and dusted with a combination of petal dusts and edible glitter. I don’t know about you but I think the scales look awesome! And what a spectacular result from such a simple method. If you don’t have petal dusts and glitters you can use a different colour buttercream and gently scrap it over the stencil then lift the stencil away.
I have some silicone moulds for the mermaid tail and sea shells and I normally would add some tylose powder to some fondant and let them set overnight before dusting but I couldn’t be bothered this time so I melted some chocolate and poured that into the moulds. Honestly I think I will do it this way from now on because it’s SOOO much faster and people would much rather each chocolate than fondant. I used dark chocolate because that’s what I had on hand but white chocolate melts are perfect for the job!
Once they were set I dusted them with silver petal dust and some purples and blues. I heated the tip of a metal skewer and drove that into the base the mermaid tail to melt a path for a wooden skewer which I lodged in the base then snapped off the excess so that I could support it properly on the top of the cake.
After that it was just a matter of piping a few little…I don’t know what you’d call those…I suppose they’re meant to look like little molluscs or something…with a combination of pink and purple buttercream using my Wilton 4B tip. I then put a little Pearl on the tip of each, sprinkled a little white glitter on the top and voilà!

Happy birthday to my beautiful Elaina. I’ve been a bit slack in the cake department lately so I wanted to pull out the stops for her 3rd birthday and a fairy theme was where it was at. I made everything except the fairy which is ceramic and I figured she could put it by her bed afterwards. I love the little mushrooms which I got the idea for from an Alice in Wonderland cake I saw on Pinterest and the little mouse. I absolutely love the bark. I’ve done a cake before with it (Felicity’s 2nd birthday cake if you don’t remember) and it was so easy and satisfying to work with. It’s a silicone mould and is so forgiving when working with fondant. So much petal dust!!! But this nature loving cake is all about the shading. I used petal dust on pretty much the whole cake. The bark, the cake board, the mushrooms, the ivy leaves, even the mouse has some on his cheeks. It really helps to take a cake to the next level so if you don’t have any consider getting some.

Sharing my latest creation. When the friend of a friend of a friend needs a wedding cake last minute (AKA your mum’s friend’s daughter). The bride found out a month before her wedding that the cake wasn’t actually lined up so I couldn’t leave a bride hanging a month from her wedding.
This is the second time I’ve ever done a wedding cake so I definitely felt the pressure. She wanted suitcases as they love to travel so the challenge was on to give the cake a wedding vibe. I had an idea in my head: the bride’s bags packed ready for her honeymoon and flowers as though she’d just laid her bouquet down on top of the cases.
Now if you’ve ever made sugar flowers you know that they take a long time to make because you need let each layer set before moving into the next. Well I forgot this fact (it’s been a while since I made sugar roses) and sat down a week before the wedding and made them all in one day. I ended up having to wrap paper towel around all the petals to hold them in place while they dried. But they turned out fine and I even managed to make chrysanthemums for the first time as well. I am really not the best at making sugar flowers so I was quite pleased with the results.
I wanted to do the suitcase in white to give it a bridal look. I had to spend a bit of time studying images of vintage suitcases to work out how everything should look. There are lots of different styles so it was a little overwhelming. When doing something like this in fondant you need to think in shapes. Break everything down into shapes. The metal corners are circles shaped around the corner with little balls of fondant flattened. The clasps are rectangles. I looked around for ways to emboss things as well. The keyhole on the top tier was a silicon mould I had. It actually had a jewel in the centre but I cut that off and smoothed the fondant where it had been then poked a keyhole shape into the fondant. I used the same mould to make the clasps and hinges and just cut shapes out of it. The base of the handles I actually used a large button I had in my sewing stash to emboss the fondant before using a piping tip to cut out around it as I didn’t have a circle cutter the right size.
For the luggage tag and passport I have edible paper. Unfortunately I don’t have an edible printer that uses edible ink so they aren’t actually edible, but given that they’re only props on the cake that wasn’t a massive concern. It’s an excellent way to add detail to a cake like this. Especially for the passports which are quite exact and for the writing on the luggage tag which I wanted to look elegant and professional. My handwriting certainly isn’t up to the task.

Well another cake to share which means there must have been a birthday. In this case my daughter Elaina turned 2 today. Inspired by this gorgeous cake from Cottontail Cake Studio but with an Aussie twist I love how this cake turned out! I tweaked my regular recipe and added some crushed macadamias, used a raspberry sugar soak and added chocolate ganache to the buttercream. It was definitely a bit morish! I made the little figurines ahead of time which gave them time to set. The only regret I have it that I discovered the non slip mat I put under the cakes to stop them slipping in transport made a really cool impression on the fondant. You can see I’ve used this on the 2 and I wish I had used it on the bushes as well! I also would have liked to have done red flowers rather than pink but I’d already made a heap of pink and time was running out. But I think the red and mustard yellow contrast beautifully to the pale pink cake and are a little bit different to your average little girl’s cake.

Got to do a cake recently which was a lot of fun. I don’t get to do them very often these days. For some reason all the cleaning and sewing I needed to do before Christmas wasn’t enough to put me off. Under the sea cakes are a lot of work as they have many small little details but they always have a wow factor when they’re done. I of course love all the little details under the sea but I was particularly pleased with the cute little umbrella which I made by cutting a circle out in 2 colours then cutting into 6 pieces and alternating colours and forming it over a bowl. I used a cake pop stick stuck into another cone of white fondant to support the umbrella underneath. How cute is the fringe?! I also like the beach towel. A pasta machine is the best tool ever for cake decorating! I decided to go with fondant for this cake purely because of all the heat we’ve been having lately so I wasn’t sure how well the buttercream would go. I also substituted a bit of butter in the Swiss Meringue Buttercream for shortening as it melts at a much higher temperature than butter so it would help keep the buttercream more stable at room temperature. Overall a very satisfying make 😊

I apologise for the awful photo but I wasn’t able to take some lovely photos outside as it was raining. But I’m sure this cake still makes an impression. I really enjoyed making this cake. It was great getting to create some new and fun textures. I wasn’t 100% happy with the checker plate as I did unfortunately flatten a lot of the impression transferring it onto the cake and my fondant was a little dried out so I ended up with some elephant skin. To create the checker plate I used an impression mat then measured the cake and cut out a large rectangle which I rolled up on my small fondant rolling pin and then unwound onto the cake. This method is called a collar. I then used my small airbrush gun to spray the cake with a silver sheen and once dry applied petal dusts with small brushes. I did all of this with the cake upside down to protect the top fondant which was black. The top tier I tried brushing silver paint in random patches but I was very disappointed with the look so I covered it with silver leaf which I LOVED. It created a beautiful abstract look to the cake and was a great backdrop for the cogs. I used a little melted chocolate to apply the cogs so I knew they weren’t going to fall off and the ones on top had floral wire inserted to keep them upright.

It’s amazing how easy it is to create a truly stunning cake. You know why? Because flowers are already beautiful. It’s hard to mess that up. This beautiful cake was to celebrate little Ysobel Carmody’s baptism. We went for an abstract art design on the cake using different colours of royal icing (by the way don’t buy the packet mix, royal icing is just egg whites and icing sugar. Super simple). The cake became my canvas and I just went with what felt natural and scraped different colours on, blending and working until I liked the look I created. If you don’t feel comfortable going straight in, have a practise run on some paper. Touches of gold leaf tied in nicely with the acrylic cake topper and added a new medium. Then I simply called the florist and told her what look I was going for, an idea of what flowers and colours I’d like, and she put together $50 worth of flowers for me. But you could also buy a bunch from woolies! And incorporate some foliage from your garden. You don’t have to splash out to make an impression. Just remember that none of the plants should be stuck straight into the cake as you don’t want to be eating little pieces of plant that might come off in the cake and some plants can be poisonous. Every single stem should be wired and wrapped with floral tape. This also reduces bulk so you don’t leave enormous holes in your cake. You can even then arrange them in your hand and tape them together into a posie before adding to your cake. I prefer to add them individually though as I like them to be looser and flow over the cake. But it’s your personal preference. Play around and see what you can create.
It’s a good thing flowers don’t hold themselves back because all the other flowers around them are already beautiful.

Well it’s been a while but I was recently asked to do a cake to celebrate 60 years of farming in Esperance for a local man and I thought why not. It was a great chance to get the creative juices going again though I was a little stumped when they said “windmill”. I was trying to think of a great way to incorporate a windmill. I’m a big fan of simple cakes. I definitely think less is more when it comes to cakes. I thought maybe I could have a little sketch on the side of a windmill so I started cruising through google looking for inspiration when I discovered this beautiful watercolour piece by John Lovett - Artist. I am a really awful watercolour artist but I thought I was up for the challenge and amazingly it turned out great! And really gave the cake a showstopper quality.
For anyone interested in giving painted cakes a go they are actually really simple to do. You can print off any picture in the correct size for your cake or draw your own design, then using a graphite pencil (which is non toxic) you can shade the back of the image then hold it up to your cake with the shaded side against the fondant (make sure your fondant has had time to dry first or you will put dents all over it) then trace over your image and transfer it onto the side of your cake. Then it’s just a matter of choosing you colours and using a clear alcohol (I used Vodka) to dilute your colours and get painting! It’s a beautiful technique and can really bring some wow factor to a cake, especially when combined with some 3D decorations.

Very proud to share with you all my creation for Elaina's 1st birthday! This is definitely one of the most stunning cakes I have ever made! And thank goodness because it was a lot of effort! I had so much trouble with the humidity as I made this cake in town (Esperance) rather than on the farm so my ganache wouldn't set and my buttercream wouldn't whip up properly and the fondant was so soft. But I got there in the end. This is another which you can find out how to make from her Craftsy class. I changed up the design quite a bit compared to hers but I wanted to use some of my stunning silicon molds and needed to downsize considerably as it was only a small party. I also LOVE it's amazing! It makes a cake stunning with so little effort. It really is so easy to use and went perfectly with this carousel themed cake.
