Ready to see root vegetables in a whole new light? Fruit Nerd Thanh is taking your basic beetroot and creating a delicious beetroot burger, full of flavour and goodness. Best enjoyed on a cold night with the family! Recipe below! 🫜🍔

Burger Patty Recipe

Blitz first
* 40 grams walnuts
* 40 grams cashews
* 40 grams rolled oats
* 1 tbsp Dijon mustard
* 1 tbsp olive oil
* 1 tsp ground cumin
* 1 tsp smoked paprika
* 1 tsp salt
* cracked white pepper
Then add, blitz, add more oil if needed.
* 200 gm beetroot, grated
* 100 gm firm tofu
Extras
- Burger buns
- Lettuce
- Cheese
- Pickled onion
- Tomato
- Avocados
- Chilli Mayo Sauce

Method
1. Add all of the burger patty ingredients into to a food processor and blitz for 30-60 seconds or until the ingredients are well mixed.
2. Form 3 balls with mixture, then flatten into a burger patty shape.
3. Heat a frypan on medium and add oil to cover, then add 3 patties.
4. Fry for 5 minutes or until base is brown then flip, and fry other side for 5 minutes.
5. Cut burger buns in half and toast each side. Then add condiments and and burger patty last. 6. Enjoy.
